Mexican Quinoa Bowl

Mexican Quinoa Bowl

1 onion, diced
3 cloves garlic, minced
1 cup quinoa, rinsed
1 tsp chili powder
1 tsp cumin
1/4 tsp paprika
1 1/3 cups broth
1 1/2 cups cooked black beans (or rinsed 15oz can)
1 cup frozen corn
15oz can diced tomatoes
1 avocado, diced
cilantro, chopped
lime juice

In a soup pot, saute onion in a couple TBSP water until tender. Add garlic and cook another minute. Add quinoa, chili powder, cumin, and paprika and lightly toast for a couple minutes. Stir in broth, beans, corn, and tomatoes, cover and simmer 25 minutes. Serve topped with avocado, cilantro, and a drizzle of lime juice.

Makes 4 servings. 382 calories, 9g fat, 35mg sodium, 63g carbs, 15g protein.
