4 russet potatoes
1/2 cup cashews
1/2 cup silken tofu
2 TBSP lemon juice
1 TBSP apple cider vinegar
1 TBSP garlic powder
1 TBSP onion powder
1/2 tsp paprika
1 tsp miso

REQUIRES PREPARATION! Bake potatoes at 350 degrees for 1 hour and allow to cool. In a 9x9 casserole dish, use a fork to chop up potatoes, leaving them somewhat chunky. Blend remaining ingredients until smooth and pour over potatoes. Fold together and bake at 250 for 30 minutes. Serve as breakfast or a side dish.

Makes 6 servings. 146 calories, 6g fat, 15mg sodium, 20g carbs, 6g protein.
