Strawberry Lemonade Cake Servings 8-10 INGREDIENTS Cooking spray 4 large eggs, at room temperature 1½ cups granulated sugar 1 cup olive oil 1 teaspoon vanilla extract ½ cup lemon juice, (about 2 lemons freshly squeezed) 1 tablespoon lemon zest 1 cup whole milk 2¼ cups all purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon kosher salt 2 cups heavy whipping cream ½ cup strawberry jam 2 cups strawberries, sliced PREPARATION 1. Preheat your oven to 350°F (180°C). 2. Grease three 8-inch tins with butter of cooking spray, then sprinkle with flour to cover all sides, shaking off any excess. Cut out three rounds of parchment paper to fit in the bottom of each tin. 3. In a large mixing bowl combine the eggs and sugar and use a hand mixer to beat until it has tripled in volume and is pale yellow and thick. 4. Continue blending and gradually add the olive oil. Add the vanilla extract, lemon zest, lemon juice, and milk, and mix until smooth. 5. Sift in the flour, baking powder, baking soda and salt. Using a rubber spatula or wooden spoon, gently incorporate into the liquid batter until just combined. Be careful not to overmix. 6. Evenly divide the batter into the three baking tins. 7. Bake for 20-25 minutes, until cakes are lightly golden and fork comes out clean from the center. 8. Allow cakes to cool into the pan for 10 minutes before transferring to a baking rack to cool completely. 9. Using a hand mixer, whisk the heavy whipping cream until soft peaks form. Add in the strawberry jam whisking together until fully incorporated and peaks are stiff. Keep in the fridge until ready to use. 10. To assemble, start with a bottom layer of cake. Cover top with a generous amount of icing, followed by an even layer of sliced strawberries. Repeat with the remaining layers. 11. Finish the cake by icing the top and sides with icing, and garnishing the top with remaining strawberries. Store in the fridge until ready to serve. Enjoy! 12. Preheat oven to 550 degrees F with pizza stone inside on the second rack from the top. 2.) Stretch out the dough on a floured workspace. 3.) Blend tomatoes on low in the blender with a pinch of salt. Transfer to a small bowl. Ladle the sauce onto the dough evenly. 4.) Break up the cheese and place around the pie. 5.) Thinly slice the lemons and place whole slices around the pie. 6.)Thinly slice garlic and add those on top as well. Sprinkle with salt and drizzle with olive oil. Transfer pie to floured paddle. 7.) Just before pizza goes into oven, switch to full blast broil. Slide pizza onto stone. Cook for 2 to 4 minutes, or until crust is golden. 8.)Remove from oven. 9.) Top with hot pepper flakes, fresh basil leaves and a drizzle of honey. Serve immediately! Vegan Cookies And Cream Cheesecake Servings: 12- 14 INGREDIENTS 3-3½ cups cashews 2 tablespoons coconut oil 30 vegan chocolate sandwich cookies, divided 1 cup coconut cream 2 tablespoons lemon juice Additional cookies to decorate top of cake, optional PREPARATION 1. Prepare the bottom of a 9-inch springform cake pan with parchment paper. 2. In a bowl, soak cashews in boiling water for 1-2 hours. 3. In the bowl of a food processor, blend 20 cookies for 30 seconds, then pour in coconut oil and continue blending until the mixture resembles coarse crumbs. 4. Press the crumbs into the bottom of the cake pan to form an even layer. Freeze for 1 hour, or until the filling is prepared and ready. 5. Scrape the filling from 10 sandwich cookies and reserve both the filling and cookies. 6. Drain cashews and add to the bowl of a food processor. Blend until nuts start to ball up and stick together, approximately 30 seconds to 1 minute. 7. Add coconut cream and cookie cream filling to the cashews and blend until fully incorporated, then add lemon juice and continue to blend until smooth. It will resemble slightly coarser hummus. 8. Once smooth, crumble in half of the reserved scraped cookies and pulse until incorporated, but not crushed. 9. Remove the crust from the freezer and smooth out half of the filling over the bottom. Crumble the remaining scraped cookies on top, then smooth out remaining filling over it. Decorate as desired and freeze for at least 1 hour before serving. 10. Enjoy! 11. Cheese Anchiladas with rice, refried beans and fried plantain.

Cheese Anchiladas
1/2 cup cooking oil
8 corn tortillas
1 (15-ounce) can purchased enchilada sauce
1 cup (8 ounces) grated or shredded cheese (such as mozzarella or queso blanco)
1 cup Cotija cheese.
Heat oven to 400 F.
Pour oil into a medium-sized saucepan and heat until it is hot, and warm the tortillas one at a time. Do not fry them. Remove tortillas from pan and drain on a paper towel.
Pour just enough sauce in the bottom of a 9x9-inch glass-baking dish to cover it. Dip a warm tortilla into the sauce, and then place a couple of tablespoons of cheese down the center of each tortilla.
Fold each half of the tortilla over the cheese, so that the tortilla is rolled around the cheese. Turn it over and place in the baking dish.
Make two layers of enchiladas in the dish, if necessary.
Pour any remaining sauce over the top of the enchiladas. Sprinkle the Cotija cheese over the enchiladas.
Bake for 20 to 30 minutes or until enchiladas are hot throughout and cheese is melted.

Spaghetti and Meatballs with “Bone Marrownara” Sauce // As Made By Richard Blais Servings: 4-6 INGREDIENTS 1 yellow onion, diced (about 1 cup) 4 cloves garlic, minced 1 teaspoon crushed red pepper flakes 2 tablespoons tomato paste 1 (28 ounce) can whole tomatoes and their juices ¼ cup red wine 1 cup whole milk ricotta cheese 8 ounces ground pork 8 ounces ground beef 3 tablespoons fresh basil, chopped 2 teaspoons fresh oregano, chopped 2 teaspoons fresh sage, chopped 1 tablespoon fresh rosemary, chopped 1 tablespoon fresh flat-leaf parsley, chopped 3-4 tablespoons extra-virgin olive oil ¼ cup chopped bone marrow 12 ounces cooked spaghetti 1 cup plain bread crumbs, toasted ½ cup grated Parmesan cheese PREPARATION 1. In a large pot over medium heat, mix the onion, garlic, and red pepper flakes. Cook until the onions start begin to soften, about 3 minutes. 2. Remove half of the onion/garlic mixture and place in a small bowl to cool. Set aside or refrigerate to cool completely. 3. To the pot with the remaining onions/garlic, add the tomato paste. Cook the tomato paste, about 2-3 minutes, stirring frequently, to caramelize the natural sugars in the paste. 4. Add the canned tomatoes and cook, stirring constantly, and scraping the bottom of the pan to make sure nothing burns, until the mixture comes to a low simmer. Break apart the whole tomatoes using a wooden spoon or squeezing with tongs. 5. Add the wine and continue to cook over medium-high heat for about 5 minutes to give the alcohol in the wine a chance to evaporate. 6. Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes longer. 7. In a medium sized mixing bowl, stir the ricotta with the reserved (and cooled) onion-garlic mixture. Add the ground pork, ground beef, basil, oregano, sage, rosemary, parsley, salt, and pepper. 8. Gently mix together first with a spoon then going in with your hands. 9. Shape the meat into ping-pong-sized balls and place on parchment lined baking sheet. Place the meatballs in the fridge if you will not be cooking immediately or if they have warmed from handling (they will keep their shape better if kept cold before cooking!). 10. Heat oil in a large saute pan over medium-high heat. Working in batches, sear the meatballs lightly on all sides until they begin to brown. They will not be fully cooked at this point. 11. Transfer the seared meatballs (and any accumulated juices) to the marinara sauce and add the bone marrow. Cover and let simmer for an additional 20 minutes to finish cooking the meatballs and allow the bone marrow to render its fat. 12. Add cooked spaghetti to the finished sauce and toss to coat. Serve garnished with toasted breadcrumbs and grated Parmesan cheese. Enjoy! Freezer-prep Breakfast Burritos Servings: 8-10 INGREDIENTS Scramble 1 tablespoon oil 5 cloves garlic, minced 14 ounces tofu, broken up 1 teaspoon turmeric 1 teaspoon paprika ½ teaspoons red pepper flakes ¼ cup nutritional yeast ¼ cup vegetable stock Hot sauce, optional Burritos Tortillas Onions, diced and cooked, optional Spinach, cooked, optional Tomatoes, sliced and cooked, optional Black beans, optional Peppers, chopped and cooked, optional Mushrooms, chopped and cooked, optional Plant-based meat alternatives, cooked, optional Pinto beans, optional Potatoes, chopped and cooked, optional Sweet potatoes, chopped and cooked, optional Corn, optional PREPARATION 1. In a medium pan, add oil and garlic and cook until garlic is lightly browned. Add tofu by pulling pieces off to produce the full “scramble” effect. 2. Add the turmeric, paprika, red pepper flakes, and nutritional yeast and stir to combine. 3. Add the vegetable stock and cook until absorbed in the tofu. 4. Drizzle with hot sauce if you desire. 5. Spoon some of the scramble in the center of a tortilla and add any fillings you would like. Leave plenty of room on the ends otherwise food will spill out once it's folded up. Fold the left and right sides of the tortilla in toward the center, then roll the bottom (the end nearest you) up towards the top. 6. Dampen a paper towel and wrap it around the burrito, mimicking the fold of the burrito itself. Do the same with parchment paper. 7. Place your burritos in a plastic bag and freeze until breakfast (safe up to 1 month). 8. When you are ready to eat, take one of the burritos out, remove parchment paper and microwave burrito (still in paper towel) in the microwave for 3 minutes. 9. Allow to cool for 1 minute. 10. Enjoy! 11. Neapolitan Ice Cream Pops Serves: 8 EQUIPMENT 4 x 8 x 2.5-inch aluminium loaf pan Popsicle sticks INGREDIENTS 1 pint chocolate ice cream, softened 1 pint vanilla ice cream, softened 1 pint strawberry ice cream, softened 2 cups semisweet chocolate chips ½ cup coconut oil Toppings Sprinkles Chopped nuts White chocolate Crispy rice cereal PREPARATION In a 4 x 8 x 2.5-inch aluminium loaf pan, spread the chocolate ice cream evenly across the bottom. The layer should be a little less than an inch thick. Place the loaf pan in the freezer for 10-15 minutes to allow the ice cream to firm up. Repeat step 1 for both the vanilla and strawberry ice cream until the loaf pan is filled with the 3 layers. Return the loaf pan to the freezer and allow it to freeze completely, about 2 hours. Prepare toppings before removing the loaf pan from the freezer. Combine the chocolate with the coconut oil and melt by microwaving, stirring every 20 seconds, until fully melted. Add crispy rice to melted chocolate if desired. Remove the loaf pan from the freezer and transfer to a cutting board. Take the popsicle sticks and press them firmly into the top of the ice cream, spacing them about 1 inch apart. Using a pair of scissors, quickly cut the outer rim of the aluminium pan. This should allow you to peel it away and reveal the layered block of ice cream. Once the pan is removed, cut the ice cream between the sticks making 8-9 individual pops. Dip the pops in the melted chocolate and transfer them to a parchment paper-lined baking sheet. Decorate with desired toppings. Once finished decorating, transfer the ice cream pops to the freezer until ready to serve. Enjoy! Preheat oven to 350˚F (180˚C). 2. Grease a muffin tin of muffin liners with cooking spray. Set aside. 3. In a large mixing bowl, whisk together eggs and sugar. 4. Slice a couple of nice, ripe peaches, add a couple of mint leaves and serve with this dressing:
2 tbsp. fresh lemon juice
zest from 1 lemon
1 tbs honey
2 sprigs julienned & minced mint leaves (abt. 2 tbsp., loose, not packed)
salt & pepper to taste
6 tblsp. olive oil

Put in a container with a close-fitting lid, shake vigorously before adding to the sliced peaches.

Preheat oven to 180°C/350°F. 2. Spread out the fries on a baking tray and bake for 20 minutes at 180°C/350°F. 3. Whilst the fries are baking, prepare the masala. 4. Heat a large skillet over medium heat and add the oil and butter. 5. Stir in the ginger garlic paste and fry for a couple of minutes. 6. Add the onion and fry for a few minutes until soft. 7. Sprinkle in the chili powder, ground cumin, ground coriander, salt, and lemon juice and stir continuously for another minute. 8. Pour in the chopped tomatoes and fry for several more minutes, until the sauce has thickened. 9. Add the fries to the pan and stir until evenly coated. 10. Protein-packed Buddha Bowl Servings: 2-4 INGREDIENTS Marinade 2 tablespoons vegetable oil ½ teaspoon sesame oil 1 teaspoon hot sauce 2 teaspoons thyme 1 teaspoon paprika ½ teaspoon salt 8 ounces tofu 1 sweet potato, peeled and cubed 1 onion, sliced 2 cloves garlic, minced 1 tablespoon oil Salt, to taste Pepper, to taste 1 cup chickpeas ½ teaspoon salt ½ teaspoon pepper 1 teaspoon chili powder 1 teaspoon garlic powder ¼ cup carrots, shredded 1½ cups quinoa, cooked 1 cup greens 1 avocado, sliced Juice of 1 lemon PREPARATION 1. Preheat oven to 400ºF(200ºC). 2. Combine marinade ingredients in a small bowl and whisk to combine. 3. Add the marinade and tofu to a container and marinate for at least 30 minutes, up to a day. 4. Lay sweet potato, onion, and garlic on a baking sheet and drizzle with oil, salt, and pepper. Bake for 20-25 minutes. 5. Add the chickpeas, salt, pepper, chili powder, and garlic powder to a bowl and stir to combine. 6. Transfer chickpeas to a skillet and cook over medium heat for about 10 minutes. Set chickpeas aside. 7. Fry the tofu in the same pan for about 10 minutes on each side. Slice tofu to your preference. 8. Combine the quinoa, carrots, greens avocado, chickpeas, and tofu in a medium-large bowl and top off with lemon juice 9. Enjoy! 10. Transfer to a freezer-safe container and swirl with peanut butter and mini chocolate chips. Re-freeze until solid. Enjoy! Watermelon Pizza Servings 4-6 INGREDIENTS 1 watermelon 2 cups whole milk plain yogurt ½ cup blueberries 1 kiwi, peeled and sliced 5 strawberries, sliced 1-2 tablespoons honey PREPARATION Slice watermelon into 1-inch thick slices, discarding the ends. Spread a layer of yogurt on top of each slice and top with fruit. Drizzle the tops with honey. Slice into pieces and enjoy! Strawberry-Kiwi Yogurt Pops Servings: 6 INGREDIENTS 1 cup strawberries 2 cups plain whole milk yogurt 2 tablespoons honey ½ cup strawberries, sliced ⅓ cup kiwi, peeled and sliced PREPARATION Combine 1 cup strawberries, yogurt, and honey in a blender. Blend until smooth. Pour evenly into popsicle molds. Stir sliced strawberries and kiwis into each popsicle and insert handle. Freeze until solid. Enjoy! Chocolate Banana Lollipops Servings: 16-18 pieces INGREDIENTS 2 bananas ½ cup semisweet chocolate, melted 2 tablespoons sliced almonds 16-18 thin popsicle sticks PREPARATION Slice the bananas into ½-inch pieces. Push a popsicle stick into each piece like a lollipop. Drizzle chocolate over the tops of each piece of banana to coat, then sprinkle sliced almonds on top. Place on parchment paper and freeze until chocolate has solidified. Enjoy!
