GRILLED TRI TIP WITH ROSEMARY GLAZE Servings: 6 INGREDIENTS Dry Rub 1 tablespoon ground black pepper 1 tablespoon mustard powder 1 tablespoon smoked paprika 1 tablespoon garlic powder 1 tablespoon onion powder 1 ½ tablespoon kosher salt 1 ½ pound tri tip roast Glaze ¾ cup light brown sugar 6 tablespoons butter ½ cup Worcestershire sauce 3 large sprigs rosemary PREPARATION 1. Combine dry rub ingredients in a small bowl and stir to combine. 2. Evenly coat the tri tip with the dry rub and let rest at room temperature for 30 minutes. 3. In a small saucepan, bring glaze ingredients to a low boil over medium heat. Simmer for 3 minutes, stirring frequently. 4. Heat a charcoal or gas grill to the medium heat. 5. Grill steak for 4-5 minutes over direct heat, then flip and grill until internal temperature reaches 125°F (52°C) on a meat thermometer. 6. Brush the steak with the brown sugar glaze, then flip the steak and repeat. Do this until you’ve used up about half the glaze then remove meat from the grill. 7. Let the steak rest for 5 minutes, then slice into ½-inch strips against the grain. 8. Serve with remaining glaze on the side for drizzling or dipping. 9. Enjoy! Here is what you'll need! RAINBOW CREPE CAKE Servings: 10-12 INGREDIENTS 6 tablespoons butter, melted 3 cups milk 6 eggs 2¼ cups flour 7 tablespoons sugar Red food coloring Orange food coloring Yellow food coloring Green food coloring Blue food coloring Purple food coloring 6 cups whipped cream PREPARATION 1.In a bowl, whisk flour and sugar. Mix in eggs, then gradually mix in butter and warm milk, alternating between the two. 2. Divide the batter into 6 bowls with 1 cup of batter in each. Add a few drops of food coloring to each bowl, and whisk until fully incorporated and the batter is colored. 3. On a nonstick skillet over medium heat, pour ⅓ cup of red crepe batter, and tip the pan to cover the entire bottom surface. Cook the crepe begins to gently bubble and cook through, then flip. Repeat until all of the different color crepe batter is used. 4. Stack crepes on top of each other, starting with purple, then blue, green, yellow, orange, and red, with whipped cream between each layer. 5. Cover the crepe cake in whipped cream, so that it’s fully white on the outside. 6. Slice, and enjoy! Inspired By Kirbie’s Cravings: http://ift.tt/1ofxk4w 5-Minute Microwave Cheesecake Servings: 1 INGREDIENTS 1 tablespoon butter 2 graham cracker sheets 4 ounces cream cheese, softened 2 tablespoons sugar 3-4 drops vanilla extract Raspberries, to serve PREPARATION 1. Melt the butter in a small microwaveable mug or dish. Grease a ramekin with the melted butter. 2. Crush the graham crackers into fine crumbs, then mix it with the remaining butter. With a spoon, press the crust flat against the sides of the dish. 3. In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps. Transfer the mixture on top of the cracker crust, then spread it evenly on top. 4. Microwave for at least 4 minutes, 30-45 seconds at a time at 50% power. Make sure the cheesecake does not bubble over the sides. 5. Chill in the freezer for at least 30 minutes, until it is completely cool to the touch. 6. With a knife, loosen the edges of the cheesecake then invert onto a plate, or eat straight from the dish. 7. Top with a few raspberries, and enjoy! Rosé Cocktails 4 Ways
Here is what you'll need! Sparkling Rosé Sangria Servings: 4 Ingredients 1 bottle sparkling rosé 1 lemon, sliced 1 lime, sliced 1 grapefruit, sliced 1 cup brandy 1 cup grapefruit juice ¾ cup simple syrup Preparation 1. In a large pitcher or bowl, combine fruit, grapefruit juice, brandy, and simple syrup. 2. Stir well, cover with plastic wrap, and chill for at least 1 hour. 3. Top with sparkling rosé, serve, and enjoy! Rosarita Servings: 4 Ingredients 1 cup tequila 1 cup lime juice ½ cup simple syrup 1 bottle rosé Ice, to serve 1 lime, sliced into wedge Pink Himalayan salt, to serve Preparation 1. In a pitcher or large bowl, add tequila, lime juice, simple syrup, and rosé. Stir to combine. 2. Pour the Himalayan salt into a shallow dish. Wet the rim of the servings glasses, and dip each into the salt. 3. Add ice to each serving glass, then top with the rosé margarita (rosarita). 4. Serve with a lime wedge, and enjoy! Frosé Daiquiri Servings: 4 Ingredients 1 cup strawberries, frozen ¾ cup rum ½ cup lime juice ¼ cup sugar 1 bottle rosé, frozen 4 strawberries, to serve Preparation 1. Add the frozen strawberries, lime juice, rum, sugar, and frozen rosé to a blender and blend until fully mixed. You may have to do this in two batches. 2. Divide between four glasses, and garnish with a strawberry. 3. Enjoy! Peach Rosito Servings: 4 Ingredients 2 peaches, 1 pitted and finely chopped, 1 thinly sliced 1 cup mint leaves ½ cup sugar ¼ cup lime juice ½ cup white rum 1 bottle rosé Preparation 1. In a pitcher add diced peaches, mint, sugar, and lime juice. 2.Mudlle for 1 minute, or until sugar has dissolved. 3. To the pitcher add rum and rose. Stir to combine. 4. Add ice to each serving glass, then top with the rosé mojito (rosito). 5. Add a peach slice to the rim of each glass, and enjoy! When you plan ahead, it's easier to eat healthy, especially when it's cashew chicken! INGREDIENTS: 2 cups of broccoli 1/2 cup white onion 1/2 teaspoon sesame oil 1/2 cup rice wine Salt 4 cloves of garlic, minced 150 grams chicken breast 150 grams chicken thighs 3 tablespoons soy sauce 1 teaspoon chili flakes 1 lemon 1/3 roasted cashews, chopped 1 1/2 cup of cooked red rice 2 tablespoons of olive oil STEPS: 1.) Heat up 1 tablespoon of olive oil in a wok. Fry off the broccoli for 3 minutes. add in the chopped white onion, sesame oil and 2 cloves of garlic, minced. Cook for 5 minutes on medium heat. Add 1/4 cup of rice wine and cook for an additional 3 minutes. Season with salt. 2.) Heat up 1 tablespoon of olive oil in another pan. Add in the cashews for 2 minutes. Fry off the sliced chicken parts until half cooked on medium heat. Add the soy sauce, juice of 1 lemon, 1/4 cup of rice wine, and a drop of sesame oil. Keep on the heat until cooked through, finish with salt to taste. 3.) Portion them equally in your Tupperware containers. Melt the milk chocolate in a microwave in 20-second intervals, stirring in between each until smooth. 2. Open a 6-inch fillable ornament, then pour the chocolate into one of the halves. 3. Close the ornament, rotating the ball so that the chocolate evenly coats the entire surface. You may have to shake a bit to eventually get the chocolate to fill in any holes. 4. Place the ball the freezer, then flip it after two minutes. Repeat this 2-3 times. The chocolate should be set by then. Freeze for at least 30 minutes. 5. Remove the ball from the freezer. Making sure to be extremely careful, open the ornament. Making sure you work quickly and that you don’t touch the ball for too long with your warm hands, remove the ball from the other half. If you want to be extra safe, place the ball back into the freezer in a bowl until it’s ready for the next step. 6. Dip or run a flat-bottomed bowl in boiling water, then dry the entire bowl. Invert the bowl onto a flat surface, then place one side of the frozen chocolate ball on the hot bowl. 7. Twist back and forth with a gentle motion, making sure that you’re not applying too much pressure to the ball, as it is very fragile. Use a paper towel to help insulate the ball from your warm fingers. You may have to reheat and wipe off the bowl a few times as it will cool down a bit. Place the ball back in the freezer. 8. On a large plate, stack the brownies on top of each other, then surround them with berries. Place a scoop of ice cream on top of the brownies, then slowly place the chocolate ball on top. 9. To cover up any holes or imperfections along the seam where the ball touches the plate, surround the base of the ball with more berries. 10. Microwave the dark chocolate with the heavy cream in 20-second intervals until smooth and glossy. 11. Pour the chocolate sauce over the ball in a circular motion. 12. Enjoy! Spicy Brown Sugar Pineapple-Glazed Ribs
"I love ribs!" Here is what you'll need! JERK BABY BACK RIBS WITH PINEAPPLE SALSA Serves 8 (when using two 2-pound racks of baby back ribs). INGREDIENTS JERK SPICE 2 tablespoons garlic powder 2 tablespoons onion powder 1 tablespoon ground allspice 1 tablespoon kosher salt 2 teaspoons ground nutmeg 2 teaspoons cascabel or ancho chili powder 2 teaspoons ground cinnamon 2 teaspoons ground cayenne pepper 1 teaspoon freshly ground pepper Combine all spices in a bowl. WET JERK MARINADE ½ cup cider vinegar ½ cup water ¾ cup soy sauce ¾ cup canola oil 1 cup sliced red onions ¼ cup sliced jalapeño peppers or 1 tablespoon diced Scotch bonnet peppers, stems and seeds removed Combine all ingredients in a medium bowl. HABANERO VINEGAR 1 habanero chile, stems and seeds removed 1 cup white wine vinegar Puree habanero chile with white wine vinegar in a food processor. Pour into a bowl. PINEAPPLE GLAZE 2 6-ounce cans pineapple juice ¼ cup brown sugar Combine pineapple juice and brown sugar in a small saucepan. Bring to a boil and cook over medium heat until sauce is thick and reduced to about one third. PINEAPPLE SALSA ½ pineapple, core included, chopped (about 2½ cups) 1/3 cup red onion, diced 1/3 cup jalapeño peppers, diced 1/3 cup red pepper, diced 1/3 cup cilantro, chopped 2 tablespoons canola oil Juice of 1 lime Salt to taste PREPARATION 1. Combine all ingredients in a medium bowl. Refrigerate until use. 2. Wash ribs and remove thin membrane covering the back. Coat ribs evenly with Jerk Spice. Arrange in a 17-by-12-by-1-inch baking pan. Pour Wet Jerk Marinade over ribs. Cover baking pan with foil and refrigerate overnight. Remove racks of ribs from marinade, and bring to room temperature, about 30 minutes. Brush ribs with 3. Habanero Vinegar. Prepare grill for cooking over indirect heat with medium-hot charcoals (moderate heat for gas grill). 4. Lightly oil grill rack, then transfer ribs to area of rack with no coals underneath or with shutoff burner if using gas grill. 5. Cook, covered with lid, until tender, 1½ to 2 hours. If using charcoal grill, add coals as needed to maintain medium heat. 6. After 45 minutes, brush ribs with Pineapple Glaze. Brush two or three more times before serving. 7. Ribs are done when meat is well-browned and has shrunk back from the ends of the bones. 8. Transfer to a cutting board and let stand for 5 minutes before cutting into individual ribs. 9. So you may have heard my Macro Monday story about how I mixed up today's Crazy Tuesday Theme with yesterday's Macro Monday theme. I told my daughter, who lives nearby about my mix-up and she text me back, "Way to trick dad into buying all those donuts and ice cream!" I'm offended my integrity has been questioned! 😊 To say I have a lot of macros of confections now, would be an understatement. However, for today's theme, I just couldn't limit myself to a small 3" macro if I don't have to!

Pineapple Fried Rice Servings: 2 INGREDIENTS 1 pineapple 8 tablespoons vegetable oil, divided 2 eggs, beaten 200 grams king prawns 3 cloves garlic, minced 1 red chili, finely diced 1 onion, finely chopped 400 grams cooked rice 150 grams mixed vegetables 1 tablespoon fish sauce Juice of 1 lime 2 spring onions, finely chopped PREPARATION 1. Using a sharp knife carefully cut the pineapple in half lengthways. 2. Using the tip of a knife, cut around the edge of the pineapple being careful not to cut through the skin. 3. Slice down and across the pineapple flesh then scoop out the pineapple cubes with a spoon. 4. Discard the core and set the flesh aside. 5. In a large wok, heat 2 tablespoons of oil over a medium heat. Fry the beaten eggs in a hot wok. 6. Once cooked, push the eggs to a side and add in the prawns to the other side. 7. Fry until the prawns are just cooked. Remove eggs and prawns from the wok and set aside. 8. Heat the wok until smoking hot and pour in 6 tablespoons of oil. 9. Add the garlic, chilli, and onion and stir until fragrant. 10. Add in the rice and vegetables, and fry until rice turns slightly brown and the veggies are thoroughly cooked. 11. Add the cooked eggs and prawns, add in the fish sauce and the prepared pineapple flesh and stir until everything is well mixed together. 12. Serve in the empty pineapple halves, along with some lime juice and spring onions. 13. Enjoy! Preheat oven to 450°F (230°C). 2. Cut the chicken breasts in half widthwise to make 4 thin breasts. 3. Season the chicken with salt, pepper, and onion powder. 4. Coat the chicken in flour, then egg, and then bread crumbs. 5. Heat oil in a cast iron skillet and fry the chicken on both sides until brown, about 4 minutes each side. Transfer to a paper towel-lined plate to drain. 6. Place the fried chicken breasts in a baking dish. If they don’t fit side by side, gently overlap them. 7. Pour the marinara over the chicken and top with mozzarella slices and Parmesan. 8. Bake for 10-15 minutes, or until the cheese is browned and bubbling. 9. Serve with freshly chopped basil. 10. Enjoy! Nuclear Fire Spicy Chicken Noodles I Seonkyoung Longest
Because some of you thought Seonkyoung's original fire chicken wasn't hot enough, she's now gone nuclear. INGREDIENTS: For chicken: 8 ounces chicken tenders 1 nuclear spicy chicken noodles sauce packet (from ramen package) 1 cup tempura powder 2 eggs, beaten Salt & pepper 2 to 3 cups panko Frying oil For nuclear sauce: 1 green onion, chopped 3 cloves garlic, chopped 1/2 onion, thinly sliced 3 tablespoons gochugaru or cheongyang gochugaru (extra spicy gochugaru) Black pepper 3 Thai chilis, chopped 3 tablespoons cooking oil 3/4 cup chicken stock 3 nuclear spicy chicken noodles sauce packets 3 serrano peppers, sliced 1 bundle of noodles from ramen package STEPS: 1.) In a bowl, add chicken tenders and top with the nuclear spicy sauce packet. Stir to make sure tenders are well coated. Marinate chicken in the refrigerator for at least 20 minutes to overnight. 2.) Prepare nuclear sauce: 3.) In a cold wok, add green onions, onion and garlic, followed by gochugaru, black pepper, Thai chili and oil. Turn to medium heat; stir and let flavors infuse to oil for about 1 to 2 minutes, or until they starts sizzle. 4.) Pour in chicken stock and nuclear spicy chicken noodle sauce packets. Bring it to boil, then add chilies. Simmer until thickened, about 5 minutes, then turn heat down to low to keep sauce warm. 5.) Cook chicken: 6.) In a skillet over medium-high heat, heat oil to 375 degrees. 7.) Add tempura powder to chicken tenders and stir until dusted. In a separate bowl, add beaten eggs, salt and pepper. In another bowl, add panko. 8.) Dip tempura-coated tenders into eggs then into panko breadcrumbs. Fry in hot oil for 6 to 8 minutes, or until chicken is fully cooked. Remove from pan and place on a cooling rack. 9.) Bring water to a boil, and cook ramen noodles for 3 minutes. Add cooked noodles to the pan with the nuclear sauce and toss to coat. Transfer noodles to a plate and set aside. 10.) Pour the remaining nuclear sauce on a preheated sizzling plate (such as a fajita pan). Place sauce-coated noodles in the middle and top with chicken tenders. Garnish with toasted sesame seeds. Enjoy!
