CREAMY CHICKEN BACON PESTO PASTA Servings: 4 INGREDIENTS 6 bacon strips, cut into 1-inch pieces 2 boneless, skinless chicken breasts, cubed 2 teaspoons salt 1 teaspoon pepper 1 teaspoon garlic powder 2 onions, sliced 4 garlic cloves, minced ¾ cup spinach 5 cups milk 1 pound fettuccine ½ cup pesto 1 cup Parmesan, grated Parmesan Fresh parsley PREPARATION In a large pot or dutch oven over medium-high heat, cook the bacon until crispy. Add chicken and season with salt, pepper, and garlic powder. Cook until the chicken is no longer pink, then remove. Add onion and garlic and cook until softened. When onions are caramelized, add spinach and cook until wilted. Add milk and bring to boil. Add fettuccine into boiling mixture and cover. Cook fettuccine on medium heat until milk thickens and pasta is cooked, about seven minutes. Add the chicken back to the pot. Stir in the pesto and Parmesan. Top with parsley and additional Parmesan. Enjoy! CHICKEN AND VEGGIES Servings: 3-4 INGREDIENTS 1 pound fingerling potatoes ½ pound carrots, 1 medium red onion, thickly sliced 4-6 garlic cloves, peeled 1 tablespoon olive oil 2 teaspoons salt, divided 1½ teaspoons black pepper, divided 1 teaspoon rosemary, finely chopped 6 boneless, skin-on chicken thighs PREPARATION Preheat oven to 425˚F/220˚C Assemble potatoes, carrots, onion, and garlic on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with rosemary, 1 teaspoon of salt salt, and half the black pepper. Use your hands to ensure vegetables are evenly coated with seasonings. Sprinkle remaining salt and pepper on either side of each chicken thigh. Arrange chicken thighs skin-side up on top of the vegetables. Roast for 40-50 minutes or until the chicken reads 165˚F/73˚C internal temperature and skin is crispy. Serve and enjoy! SHRIMP FAJITAS Servings: 5 INGREDIENTS 5 flour tortillas ½ red bell pepper, seeds removed and sliced lengthwise ½ green bell pepper, seeds removed and sliced lengthwise ½ orange bell pepper, seeds removed and sliced lengthwise ½ red onion, sliced 1 pound shrimp, peeled and deveined Olive oil 1 teaspoon salt ½ teaspoon pepper 1 teaspoon garlic powder 1 teaspoon cumin Juice of 1 lime Salsa Guacamole Cilantro PREPARATION Preheat oven to 400°F/200°C. Wrap the tortillas in foil and place on the corner of a baking sheet. Add the bell peppers, red onion, and shrimp to the sheet and season with olive oil, salt, pepper, garlic powder, cumin, and lime. Toss to coat. Place in the oven and bake for 10 minutes, flipping the shrimp halfway through. Serve with warm tortillas, salsa, guacamole, cilantro, and lime. Enjoy! SAUSAGE AND PEPPERS PASTA Servings: 4-5 INGREDIENTS 1 pound short pasta (we used bow ties) 1 tablespoon olive oil 3 hot Italian sausages 3 sweet Italian sausages 1 red bell pepper, chopped 1 green bell pepper, chopped 1 yellow bell pepper, chopped ½ white onion, sliced 2 cloves of garlic, peeled and sliced 28 ounce can diced tomatoes 1 teaspoon oregano 1 teaspoon salt 1 teaspoon black ground pepper PREPARATION 1. Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions. 2. Strain pasta and set aside. Toss with a small amount of oil to prevent sticking 3. In the same pot, heat the olive oil and fry sausages, working in batches as needed, until deeply browned on all sides. 4. Remove sausages, slice in ¾-inch pieces, and set aside. 5. Sauté the bell peppers, onion, and garlic for about 2 minutes. 6. Add the canned tomatoes, all of the spices, and the sliced sausage to the pot. 7. Cover, and simmer about 10 minutes. 8. Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente. 8. Serve with grated parmesan. 9. Enjoy! LEMON PEPPER CHICKEN & RICE Servings: INGREDIENTS 3 tablespoons lemon pepper 1 tablespoons paprika 6

Korean Spicy Baby Back Ribs With Cheese | Seonkyoung Longest
Ribs with Cheese? OMG, Yes! Who knew ribs could pull off such epic cheese pulls? INGREDIENTS: For the Ribs 1 rack of baby back ribs (about 3 lbs) 7 cups cold water 10 cloves garlic or 1 bulb of garlic 2 to 3 slices of fresh ginger (Oreo-cookie size) ½ yellow or white onion ½ cup soju, sake (rice wine) or vodka 1 Tbsp black peppercorn 2 bay leaves 4 dried Thai chilies, crushed, or 1 Tbsp red pepper flakes 3 Tbsp soy sauce 3 Tbsp sugar For the sauce 3 Tbsp gochujang (Korean red pepper paste) 2 Tbsp soy sauce 2 Tbsp mirin 3 Tbsp honey 3 Tbsp sambal (chili garlic sauce) 5 cloves garlic 2 Tbsp Korean sweet plum sauce (Maesilcheong), apricot preserve or apple jelly ¼ tsp black pepper For the cheese mixture 2 cups mozzarella cheese 3 Tbsp sour cream, crema, heavy cream, cream cheese or milk STEPS: 1.) Cut baby back ribs into single pieces. In a large pot, combine all ingredients for ribs and stir gently so everything mixes into water. 2.) Make sure ribs are covered with seasoned water. 3.) Cover with a lid and bring to a boil over high heat. When it starts boiling, reduce heat to medium and cook ribs for 1 hour 30 minutes. 4.) Stir once about halfway through cooking time. 5.) Meanwhile, prepare spicy sauce. In a blender, food processor or using a hand blender, blend all ingredients for sauce until smooth. 6.) Cover and place in refrigerator until ready to use. 7.) In a mixing bowl, add mozzarella cheese and cream; mix well. 8.) Cover and place in refrigerator until ready to use. 9.) Turn off heat and carefully remove ribs from pot to a plate. Place ribs in refrigerator for 20 minutes so meat will cool and firm up before grill. 10.) Heat grill over medium heat and place ribs on grill. Brush spicy sauce on ribs. Flip ribs while cooking, adding another coat of sauce to the ribs with every flip. Reserve 1 tablespoon of the sauce for serving. 11.) In a large cast-iron skillet, spread cheese mixture around edge, like a ring. Carefully place grilled ribs in the middle. Heat cast-iron skillet over medium high heat. When cheese melts completely and you can hear sizzling, it’s ready to serve. Enjoy! Spray a pan with nonstick spray and line with parchment. 2.) Melt 2 chocolate discs and pour into pan and let set in the refrigerator. 3.) Copycat Garlic Butter Breadsticks
All-You-Can-Eat-Breadsticks? At home? I may never leave my house! Here is what you'll need! Copycat Garlic Butter Breadsticks Servings: 12 INGREDIENTS 1 cup warm water (105˚F to 115˚F) 2 tablespoons sugar ¼ cup butter, melted 1 teaspoon active dry yeast 3 cups all-purpose flour 1 ½ teaspoons salt, optional 2 tablespoons butter, melted ½ teaspoon garlic salt PREPARATION Preheat the oven to 400°F/200°C. Add the warm water to a large bowl with the melted butter, sugar and yeast. Stir to help the yeast dissolve and let the mixture sit for 5 minutes, or until it becomes foamy on top. Add in the flour and salt (optional) to the yeast mixture. Use a mixing spoon to incorporate the wet and dry ingredients until it comes together into a sticky ball. Cover the dough with a towel and place in a warm part of your kitchen. Let rise for 1½ hours, or until it doubles in size. Remove the risen dough from the bowl and knead on the counter with extra flour until the dough becomes smooth on the surface and no longer sticky. With a rolling pin, flatten the dough until it’s about a 7 x 12 inch rectangle. If you don’t have a rolling pin, you can cut the dough into 2 ounce portions and roll each into 7 inch long logs with your hands. Place the dough on parchment paper-lined baking sheets with cooking spray. Brush melted butter and sprinkle garlic salt on the dough. Bake the breadsticks for 15 minutes, or until golden brown. When the breadsticks come out of the oven, serve immediately or cool and store in the freezer for up to 6 months to eat at a later date. Enjoy! Homemade Ice Cream 4 Ways Servings: 8-10, each recipe Cookies ‘N’ Cream INGREDIENTS 2 cups heavy cream 1 14-ounce can condensed milk 12 chocolate sandwich cookies, crumbled (additional cookies for topping if desired) PREPARATION In a large bowl, add the cream and condensed milk, then whip until soft peaks form. Add the cookies and gently fold to combine. Transfer mixture to a baking pan. Top with additional cookies if desired, then freeze for 3-4 hours. Enjoy! Brownie Caramel INGREDIENTS 2 cups heavy cream 1 14-ounce can condensed milk 3 tablespoons cocoa powder 1½ cups brownies, chopped (additional brownies for topping if desired) 1 cup dulce de leche PREPARATION In a large bowl, add the cream, condensed milk, and cocoa powder, and whip until soft peaks form. Add the brownies and gently fold to combine. Add the dulce de leche and gently fold, being careful not to fully incorporate into the mixture. Transfer to a baking pan and freeze for 3-4 hours. Enjoy! Strawberry Cheesecake INGREDIENTS 2 cups heavy cream 1 14-ounce can condensed milk 4 ounces cream cheese, softened ½ cup strawberries, stems removed and chopped ½ cup strawberry jam 4 graham crackers (additional crackers for topping if desired) PREPARATION In a large bowl, add the cream and condensed milk, then whip until soft peaks form. Add the cream cheese, strawberries, and strawberry jam, and mix thoroughly. Gently fold the crackers into the mixture, then transfer to baking pan (top with crackers if desired). Freeze for 3-4 hours. Enjoy! Cookie Dough INGREDIENTS 1 cup flour ½ cup butter ½ cup brown sugar ¼ cup milk 1 teaspoon vanilla extract 1 cup mini chocolate chips 2 cups heavy cream 1 14-ounce can condensed milk PREPARATION Preheat oven to 350˚F/175˚C. Evenly spread the flour out on a sheet pan, and bake for 5 minutes to kill bacteria. In a large bowl, cream the butter and sugar. Add the milk and vanilla, and mix until thoroughly incorporated. Add the baked flour and mix, and gently fold in chocolate chips. Using a small spoon, scoop out dime-sized rounds of the dough and transfer to a sheet pan. Freeze for a minimum of an hour. In a large bowl, add the cream and condensed milk, then whip until soft peaks form. Fold in the frozen cookie dough, then transfer to a baking pan. Top with additional cookie dough chunks if desired. Giant Cookie Ice Cream Sandwich
Here is what you'll need! Giant Cookie Ice Cream Sandwich INGREDIENTS 2 cups brown sugar 2 cups white sugar 2 cups butter, melted 4 eggs 5 cups flour 2 teaspoons baking powder 1 teaspoon salt 4 cups semisweet chocolate chips 5 cups vanilla ice cream, slightly softened Mini chocolate chips PREPARATION Preheat oven to 375°F/190°C. In a large bowl, whisk together the brown sugar, white sugar, and melted butter. Add in the eggs and vanilla, and whisk until combined. Add in the flour, baking powder, and salt, and mix together until just combined. Add in the chocolate chips and mix again. Spay two round pans with nonstick cooking spray and separate the cookie dough into each pan. Pat down the dough with a spatula until the surface is even, and bake for 35 minutes or until golden brown. While the cookies are baking, place plastic wrap in a springform pan. Pour softened vanilla ice cream into the springform pan and spread evenly. Freeze until solid, about 1 hour. Once the cookies have baked and cooled, turn them over onto a tray. Place the ice cream disk on top of one half and cover with the other half. With your hand press the mini chocolate chips to the outside of the cookie. Freeze again until solid. Enjoy! Buffalo Chicken Spaghetti Squash | 5 Second Rule with Julie
If you love spicy chicken and pasta — but not the carbs — then this flavorful dish is for you. INGREDIENTS: 1 medium spaghetti squash 2 cups of cooked shredded chicken 1 cup freshly grated old cheddar 1/3 cup Frank’s Red Hot sauce 2 tbsp melted butter 1/3 cup green bell pepper 1/3 cup sour cream 1/3 cup chopped green onion salt and pepper, to taste ranch dressing extra grated cheese for topping serve with celery STEPS: 1.) Pre-heat oven to 400˚F and line a baking dish with foil. Slice spaghetti squash in half lengthwise and scoop out the seeds. Rub the inside of the squash with a drizzle of olive oil and place face down on the baking sheet. Roast for 40 minutes, or until tender. 2.) Shred the chicken and add to a medium bowl along with the hot sauce, melted butter, sour cream, bell pepper, cheddar and half the green onion. 3.) Once the squash has cooled enough to handle it, scrape the flesh using a fork and add it to the cheesy buffalo chicken mixture. Mix together and then add back to the empty squash skins. Top with a little more cheese and then bake at 350˚F for 20 minutes. Finish with chopped green onion and a drizzle of ranch dressing.
