Coconut Pineapple Lime Cake Recipe - Coconut Pineapple Lime Cake: INGREDIENTS 1 c salted butter 2 c Sugar 6 eggs 1 T coconut emulsion 1 T Lime extract 3 t Baking Powder 2 t salt 2 t tart and sour flavoring 4 c AP flour 2 c whole milk ½ c fresh pineapple ½ c coconut shreds INSTRUCTIONS Preheat the oven to 350. In a mixer cream butter and sugar. Add eggs one at a time until well incorporated. Add coconut emulsion and lime extract. In a medium bowl, sift flour, baking powder and salt. Alternate between milk and dry ingredients into creamed butter and sugar. Fold in pineapple and coconut shreds. Pour into 2- 6” pans and 2-8” pans and bake for 25- 30 mins. Once cakes are completely cooled, frost and enjoy. Coconut Pineapple Frosting: INGREDIENTS 2 c salted butter 4 c Powdered Sugar 2-3 T heavy cream 1 T coconut emulsion 1 T lime extract 1 t pineapple juice ½ juice of a lime 2 t salt 1 T ground ginger INSTRUCTIONS In a clean mixer bowl cream butter on high. Add coconut emulsion, lime extract, pineapple juice, lime juice, salt, and ground ginger. Mix until well combined. Add powdered sugar 1 cup at a time.
