General Tso's Tofu
SAUCE
3 TBSP low sodium tamari
3 TBSP apple cider vinegar
3 TBSP broth (or water)
3 TBSP date sugar
1 TBSP arrowroot powder
1/8 tsp red pepper flakes
2 TBSP low sodium tamari
1 TBSP apple cider vinegar
14oz package extra firm tofu, frozen, drained, pressed, and sliced into cubes
6 TBSP arrowroot powder
2 cloves garlic, minced
3 cups cooked brown rice
3 cups frozen vegetables, steamed
Mix SAUCE ingredients and set aside. Mix tamari and apple cider vinegar in a shallow container and add tofu to marinate for at least 5 minutes. Drain and discard marinade. Transfer about 1/3 of the tofu at a time to a sandwich bag along with 2 TBSP arrowroot powder. Toss to coat in batches. Add to a non-stick skillet and brown tofu. Transfer to a plate. Add garlic to skillet and cook several minutes. Add SAUCE to pan and allow to thicken, then re-add tofu and toss to coat. Serve with sides of brown rice and vegetables.
