Gnocchi

Gnocchi


Love gnocchi. Since I had been cooking already, I decided to use remaining vegetables to make a sauce.



1 package of fresh pre-made gnocchi

few cloves garlic

1 small onion

1 medium ripe tomato

few mushrooms

frozen peas

few leaves basil (fresh from my garden!)

olive oil

white wine

cream

salt and pepper



Boil water for gnocchi. Heat some olive oil and add crushed garlic and chopped onions. Cook until onions are soft and garlic are toasted a light golden color.



Wash and slice mushrooms. Add to oil. At this point, I don't add any salt because I want the mushrooms to brown a little. Once that starts to happen, wash and chop tomatoes. Add to tomatoes to the pan then salt and pepper to taste. The salt will draw out the water from the tomatoes and create a sauce.



When the natural juice from the tomatoes and onions get a little sticky, add a few splashes of white wine. Let the alcohol cook out. At this point, the gnocchi should be ready. You can tell that when they start to float to the top. Take a strainer and add the cooked gnocchi to the pan with the sauce. Toss a little, and pour a little cream. Salt and pepper to taste and raise the heat. Add the frozen peas. Once the peas are heated through, turn the heat off, rip a few pieces of basil and sprinkle over the top.
