Homemade milk bread french toast stuffed with banana and dark chocolate
Recipe: (serves 1)
2 thick slices of bread (preferably brioche/challah good for soaking up liquid)
1/2 banana
15g of dark chocolate, chopped
1/4 cup milk
2 tsp sugar
1/2 egg
1/2 tsp cinnamon
1. Mash banana and mix together with dark chocolate. Spread mixture evenly over one slice of bread, leaving a margin for the edges. Cover with second slice and press together firmly.
2. Whisk together milk sugar egg and cinnamon in a shallow bowl. Dip sandwich into custard until well-soaked, about 1 min on each side.
3. Preheat oven to 160C
4. Melt a knob of butter over medium high heat in a nonstick frying pan until sizzling. Carefully transfer sandwich and cook until underside is well-browned. Flip gently and continue cooking other side until it is well-browned.
5. Transfer sandwich to a baking tray and bake in oven for about 5 min until cooked throughout, watch carefully not to burn the toast. Serve immediately
