Blooming Quesadilla Ring
Blooming Quesadilla Servings: 20-40 INGREDIENTS 2 cups cooked chicken, shredded 1 onion, chopped 1 red bell pepper, chopped 1 jalapeño, chopped 1 cup taco sauce 20 taco-size tortillas 3 cups shredded cheddar cheese 3 cups shredded Monterey Jack PREPARATION 1. Preheat oven to 375˚F (190˚C). 2. In a bowl, add the chicken, onion, red bell pepper, jalapeño, and taco sauce, and mix to combine. Set aside. 3. Cut each tortilla in half. Evenly spread about 2 tablespoons each cheddar cheese Monterey Jack cheese and chicken mixture on one half of the tortilla. Roll the tortilla into a cone starting from the cut edge making sure not to push the ingredients out of the tortilla. 4. On a parchment paper-lined baking sheet, place a wide mouth jar or glass in the center. Create a ring around the jar with the tortilla cones. The point of the cones should be in the center, touching the surface of the jar. There should be about 13 cones in the first layer. 5. Sprinkle both cheddar cheese and Monterey Jack cheese over the first layer of cones. 6. Start the second layer of cones by placing one cone on top and in between 2 cones in the first layer. Continue this process with the rest of the cones. There should be 3 full layers of cones with 3 left to fill some of the empty space in the top. 7. Sprinkle the rest of the cheddar and Monterey Jack on top of the blooming quesadilla. Remove jar from center of ring. Bake until the cheese is melted and the edges of the tortillas are crispy, 15 to 20 minutes. 8. Transfer to a plate. Place dip of choice inside the ring. Top with desired garnishes. 9. Serve immediately. Enjoy! Preheat oven to 400°F (220°C) 2. Unfold the puff pastry. Spread the chocolate hazelnut spread onto the middle third. 3. Arrange the sliced bananas on top of the spread in a single layer. 4. Bananas may slightly overlap. 5. Cut out a triangle of the top right corner of the pastry. Repeat on the other side. 6. Cut diagonal slits along both sides of the pastry. Each will be around 1” thick. 7. Fold over the top piece of dough to partially cover the top row of bananas. 8. Alternating both sides, fold the strips of pastry over the bananas, mimicking a braid pattern. 9. Trim the excess dough on the sides, and fold over the bottom flap. 10. Brush the top of the braided pastry with the beaten egg. Transfer to a parchment lined baking sheet for and bake 15 minutes or until the pastry is golden brown. 11. Just Add Water I Struggle Meals
There's no easier way to save a few bucks than by buying dry. Beans and barley can be turned into a week's worth of chicken chili, salad or mushroom risotto with this important, and free, ingredient — water. White Bean Chili INGREDIENTS: 2 tablespoons oil 1 onion, diced 3 cloves garlic, minced 1 tablespoon cumin 4 cups chicken stock 1 pound dried white beans, soaked overnight 1 tablespoon dried oregano 1/2 butternut squash, peeled and cubed 1 pound boneless, skinless chicken thighs Salt to taste STEPS: 1.) In a large pot, heat oil. Add onion and garlic and saute until soft. 2.) Stir in cumin, stock, and water. 3.) Add beans and simmer for 1 1/2 to 2 hours. 4.) In the last 1/2 hour of cooking, stir in squash and chicken. Barley Risotto INGREDIENTS: 1/4 cup butter 3 cups chicken stock 1/2 onion, diced 5 ounces baby bella mushrooms, sliced 2 cloves garlic, smashed 2 sage leaves, chopped 1/2 cup barley STEPS: 1.) Heat butter in a sauce pot. In a separate sauce pot, heat the chicken stock. 2.) To the pot with the butter, add onion, mushrooms, and garlic, and cook until soft. 3.) Stir in sage and barley. 4.) Add one cup of stock and simmer until liquid is absorbed. 5.) Continue adding stock 1/4 cup at a time, allowing each amount of liquid to absorb before adding more. 6.) Continue until all the stock is used and barley is done cooking, about 35 minutes. Barley Salad INGREDIENTS: 1/2 butternut squash, cut into small cubes 1/4 cup plus 1 tablespoon olive oil, divided 3/4 pound barley 1 lemon 2 teaspoons cumin 2 shallots, minced 1/4 cup dried cranberries 1/4 bunch of parsley, chopped STEPS: 1.) Heat oven to 400 degrees. 2.) Toss butternut squash with 1 tablespoon oil and spread on a baking sheet. 3.) Bake for 20 minutes until soft. 4.) Cook barley in salted, boiling water for 25 minutes. Drain well and pour into a large bowl. 5.) Whisk together 1/4 cup olive oil, lemon and cumin. 6.) Toss with roasted squash, shallots and barley. 7.) Garnish with parsley. They are very simple and straightforward to make – only five ingredients needed, and the spices are optional. You can make them in under 30 minutes, which really makes them great for parties and gatherings, or for when you simply want warm cheese biscuits for a snack. They also make great little sandwiches, and they are really good for dips.

Plain and simple, I love these cheese biscuits. I think I have made thousands of these over the years. They are very simple and straightforward to make – only five ingredients needed, and the spices are optional. You can make them in under 30 minutes, which really makes them great for parties and gatherings, or for when you simply want warm cheese biscuits for a snack. They also make great little sandwiches, and they are really good for dips.

Martinis nudge my being towards reflections in autumn and winter. The elegant glass of yesterday encourages memory. While a Gin fan, I’m not attracted to fire-water martinis. Never have been. The Lillet replaces vermouth and creates a mouth-watering profile. But put together some subtle flavors and I’m all about sipping away the time.
In a shaker mix for each drink:
1.5 oz. Gin
1 oz. Lillet
2 dashes of orange bitters

Pour into a martini glass, add 3 terribly large olives and a few drops from a lemon wedge

GOURMET SALMON DINNER Easy Salmon Dinner Servings: 2 INGREDIENTS 1 pound potatoes Olive oil, to taste Salt, to taste Pepper, to taste 3 tablespoons lemon juice 2 garlic cloves, minced ½ teaspoon onion powder ½ teaspoon paprika ½ teaspoon dried thyme ½ teaspoon dried parsley 2 tablespoons honey 2 salmon fillets 1 bunch asparagus PREPARATION 1. Preheat oven to 400˚F (205˚C) 2. Add potatoes to a parchment paper-lined baking sheet. 3. Season with olive oil, thyme, salt, and pepper. 4. Bake for 20 minutes. 5. To prepare salmon marinade, combine lemon juice, garlic, onion powder, paprika, thyme, parsley, and honey, and stir until evenly combined. 6. On the same baking tray, push the potatoes to one side of the tray and add salmon and asparagus. 7. Season the salmon and asparagus with olive oil, salt, and pepper. Brush the marinade on the salmon. 8. Bake for 12-14 minutes or until salmon is cooked. 9. Enjoy! Gourmet Salmon Dinner Servings: 2 INGREDIENTS 2 salmon fillets Salt, to taste Pepper, to taste Thyme, to taste Olive oil, to taste 4 cloves garlic, minced 2 pounds potatoes, boiled 2 shallots, thinly sliced 5 tablespoons butter, divided ½ cup whole milk 1 teaspoon salt ½ teaspoon white pepper 1 cup porcini mushrooms, trimmed 1 bunch asparagus, ends trimmed 2 salmon fillets Salt, to taste Pepper, to taste Thyme, to taste Olive oil, to taste PREPARATION 1. In a medium-sized pan on medium high heat melt 3 tablespoons butter and add shallots. Cook for 3-4 minutes. 2. Add garlic and 2 more tablespoons of butter into pan and continue to cook for another 3-4 minutes, stirring frequently. 3. Add milk, white pepper, and salt to pan and stir until incorporated. 4. Transfer the shallot mixture to a food processor and process into a paste. 5. Mash potatoes and incorporate shallot mixture and continue to mash until fully incorporated. 6. Add olive oil to a large pan over medium heat and add in the mushrooms, cooking for 5 minutes, stirring occasionally. 7. Add the asparagus to the pan and season with salt and pepper, cooking for 5 minutes. 8. On a cutting board, cut 4 slits into salmon skin roughly a quarter inch apart and ½-inch into the salmon. 9. Season salmon with salt, pepper, and thyme. 10. Add olive oil to a medium pan on medium-high heat and place the salmon skin-side down. 11. Cook for 3-4 minutes or until a lighter pink color has reached ⅓-½ of the way up the side of the salmon. 12. Flip salmon and immediately add the butter, garlic, and thyme. 13. Stir the garlic and thyme around the pan to infuse the flavors and spoon the butter onto salmon. 14. Allow salmon to cook through, roughly 2 more minutes. Transfer the salmon to a paper towel-lined plate. 15. Add the potato puree to a plate, and top with mushrooms, asparagus, and salmon. 16. Enjoy! Preheat oven to 375°F (190°C). 2. Cook pasta according to package instructions. 3. Toss shiitake mushrooms, oil, smoked paprika, salt, and pepper in a medium bowl. 4. Arrange mixture on parchment paper-lined baking sheet and bake for 8 minutes. Flip the mushrooms and continue baking for 8-9 minutes, or until mushrooms are crispy and brown. 5. Cool mushroom slices on baking sheet. 6. For the sauce, combine cashews, olive oil, garlic cloves, nutritional yeast, milk, lemon juice, pepper, salt, and paprika in a blender or food processor. Blend until smooth and creamy. 7. Drain water from pasta and return pasta to pot. 8. Add the sauce and stir until pasta is well-coated. 9. Mix in mushroom bacon. 10. Top with parsley, and enjoy! Once boiling, reduce to a simmer, cover and cook for 35 minutes. 3. Once cooked, mix in the corn and black beans. 4. Continue with another layer of noodles and repeat. 7. Cover the top layer of lasagna noodles with more tomato sauce and a layer of mozzarella and Parmesan. 8. Place the lid on the glass container, without locking it closed. 9. Microwave for 7 minutes or until the cheese is melted through. 10. Download the new Tasty app: http://ift.tt/2w3p2CN Reserve the One Top: http://bit.ly/2v0iast GENERAL TSO’S TEMPEH Servings: 4 INGREDIENTS 16 ounces tempeh ¼ cup cornstarch 1 teaspoon paprika 4 cloves of garlic, sliced, divided 4 teaspoons ginger, grated, divided 2 tablespoon sesame oil, divided 2 tablespoons rice wine 4 tablespoons soy sauce, divided ¼ cup oil ½ teaspoon red pepper flakes 1 tablespoon tomato paste ¼ cup vegetable broth 1 tablespoon rice vinegar 1 tablespoon honey 1 tablespoon cornstarch 2 tablespoons water PREPARATION 1. Chop the tempeh into chicken nugget-sized pieces and transfer to a mixing bowl. 2. Add the cornstarch, paprika, ginger, garlic, sesame oil, rice wine, and soy sauce to the bowl and mix until incorporated. Cover and chill in fridge for 1 hour minimum. 3. Add oil to a pan on medium-high heat and pan-fry tempeh until browned on both sides. Remove from pan. 4. In the same pan, add in oil and sesame oil on medium-high heat. 5. Add the garlic, ginger, and red pepper flakes, and cook until golden brown and aromatic, about 1 minute. 6. Add the tomato paste and vegetable broth, and stir until incorporated. 7. Add the soy sauce, rice vinegar, and honey, and stir until all are incorporated. 8. Combine the cornstarch with the water in a small bowl until paste forms. Add into sauce mixture and stir until sauce thickens. 9. Return the tempeh to the pan and allow to incorporate with the sauce. 10. Enjoy! Charred Asparagus and Green Onion With a Lemon Vinaigrette INGREDIENTS: 1 bunch asparagus, peeled and cut into 2-inch pieces 1 bunch green onions, trimmed and sliced in thirds 1/8 cup of olive oil Pinch of salt 1/4 teaspoon freshly ground pepper 1 small shallot, finely chopped Juice & zest of 1 lemon 1 teaspoon Dijon mustard 1 teaspoon honey STEPS: 1. Preheat oven to 375°F. 2. On a sheet tray, add asparagus and green onions. Drizzle olive oil, a pinch of salt and toss. Place on top rack of oven. Let cook for 16 to 18 minutes. 3. In a small bowl, add shallot, lemon zest and juice, mustard, honey, and 1/2 teaspoon salt and pepper. Whisk until combined. Drizzle in olive oil while whisking to emulsify. 4. Strawberry, Blackberry and Mint Salad with Balsamic Vinaigrette INGREDIENTS: 2 tablespoons balsamic vinegar 2 teaspoons light brown sugar 1 pound strawberries, hulled and halved 1/2 cup blackberries 1/2 cup arugula 1/4 cup mint, chiffonade STEPS: 1. In a bowl, whisk together the balsamic and brown sugar. 2. Add strawberries, blackberries, arugula and mint. Gently toss to cover with balsamic mixture. Serve. For a satisfying balanced dinner with a bright Mediterranean flavor, pair Lean Cuisine Spinach and Artichoke Ravioli with blackened salmon & a shaved zucchini arugula salad. Blackened Salmon INGREDIENTS: 1 (3 ounces) salmon filet, skin on 1 teaspoon unsalted butter, melted 1/4 teaspoon paprika 1/8 teaspoon ground cumin 1/8 teaspoon dried thyme 1/8 teaspoon onion powder A pinch of cayenne pepper STEPS: 1. In a small bowl, mix all the spices until well blended. 2. Brush salmon with melted butter. Rub spices over salmon. Set aside. 3. Heat a large cast-iron skillet on high heat. When hot, add salmon, skin side down. Let cook for 2 to 3 minutes. Allow skin to get crispy. Flip and cook for another 2 to 3 minutes. Remove to plate. Let sit for a few minutes before serving. Shaved Zucchini Salad With Arugula and Mint Salad Ingredients: 1 zucchini, washed and ends trimmed 1/4 cup arugula 1 mint sprig, leaves only 1 tablespoon walnuts, chopped Pesto Dressing Ingredients: 1/4 cup parsley 1/8 cup packed fresh basil leaves, torn 1 mint sprig mint, torn 1 small clove garlic, roughly chopped 2 teaspoons walnuts, chopped Zest of half a lemon 1 teaspoon lemon juice 1/4 teaspoon black pepper 2 tablespoons extra-virgin olive oil STEPS: 1. Prepare the dressing. In a food processor, add the parsley, basil, mint, garlic, walnuts, zest, lemon juice and pepper. Pulse until roughly chopped. Add olive oil. Blend until smooth. 2. Using a vegetable peeler, peel zucchini into ribbons. 3. In a large bowl, add shaved zucchini, arugula, mint and walnuts. Drizzle in dressing and toss to combine. Serve. While your CPK Sicilian Thin Crust Pizza bakes to perfection in the oven, throw together a refreshing arugula melon salad and some crispy zucchini fries to balance your plate. Zucchini Parmesan Fries INGREDIENTS: 2 medium zucchini, cut into 1/2-inch x 3-inch sticks 1 large egg Pinch of salt 1 teaspoon water 1/2 teaspoon freshly ground black pepper 1/2 cup plain breadcrumbs 1/4 cup grated Parmesan STEPS: 1. Preheat oven to 400°F. Generously spray a sheet tray with cooking spray. 2. In a shallow bowl, lightly beat the egg with 1 teaspoon water, a pinch of salt and 1/4 teaspoon black pepper. In a another bowl, combine the breadcrumbs, Parmesan, and 1/4 teaspoon pepper. 3. Dip zucchini fries into egg mixture. Shake to remove excess egg, then generously coat in the breadcrumb mixture. Preheat oven to 400°F. 2. Place slices of prosciutto flat on parchment paper over a baking sheet. 3. Bake about 10 minutes, or until crispy. Remove from oven and let cool. Break the prosciutto up into pieces. Set aside. 4. Slice cantaloupe into 7 to 8 wedges. Place on platter. Sprinkle with arugula. Drizzle balsamic glaze, oil and pepper. Sprinkle with crispy prosciutto. Serve.
