Lomo Saltado Peruvian Stir Fry I Good Times With Jen
You'll truly wish you've been eating fries this way all along. INGREDIENTS: 1 1/2 cups french fries, baked or fried 1 pound sirloin steak, cut into thin stirps 2 garlic cloves, thinly sliced 1 red onion, cut into thin wedges 4 plum tomatoes, cut into wedges and seeded 3 tablespoons aji amarillo paste 1/4 cup soy sauce 2 tablespoons red wine vinegar 2 teaspoons cumin Cilantro to serve Salt & pepper to taste Oil for pan STEPS: 1.) Heat oil in a skillet on med-high heat. Pat dry steak strips and season with cumin, salt, pepper. Add beef to brown for a few minutes. 2.) Add onion and garlic. Stir and saute, until softened. Add aji amarillo paste, soy sauce, and vinegar. Mix well. Add tomatoes and cook for another 2-3 minutes. Sprinkle in cilantro. 3.) Serve with fries and rice.
