Ulla’s Sugar Cake - basically, all the variations of these “basic sponge cakes” are called “sugar cakes” …. and this recipe is old, and still often used, so of course there will be slight variations. This version is from the cookbook we used in school in the 1950s.
(Yeah. I'm old. And happy to be able to tell the tale.)

Recipe for a 20 cm/8” fluted cake pan

Preheat oven to 350˚F (175˚C)
Prepare a cake pan - grease inside with butter, then shake in flour, or use Baker’s Joy :-)

Ingredients
2 eggs
1 cup (2dl) sugar
3/4 (75g) stick butter, melted
1 1/4 cup (3dl) flour (All Purpose)
2 1/2 teaspoons baking powder
1/2 cup + 2 tablespoons (1 ½ dl) cream
zest from 1 lemon, or vanilla (have never measured the vanilla, just “to taste”)

Melt the butter, set aside.
Beat sugar and eggs until fluffy and lemon yellow in color.
Gradually beat in the melted butter, cream and flavoring.
Mix baking powder with flour, and add to batter.

Pour batter into cake pan, and bake for about 35 - 45 minutes - until the cake has a nice golden color, pulls away a bit from the pan, and a cake tester comes out clean.

Works well for a layer cake, too. The Strawberry Cake I made was baked in an 8.2 x 2.6”/ 20.3 x 6.63 cm spring form pan from Wilton.
