FarmerLynn has added a photo to the pool:
2 TBSP ground flaxseed
5 TBSP water
1/3 cup pumpkin puree
1/4 cup sweetener (I used maple syrup)
2 TBSP applesauce
1 1/2 tsp pumpkin pie spice
1 tsp cinnamon
2 cups plant milk
2 1/2 cups rolled oats
3/4 cup chopped walnuts
1/4 cup dried cranberries
2 TBSP date sugar
Preheat oven to 350 degrees. Mix flaxseed and water in a large mixing bowl and let soak 5 minutes. Add pumpkin, sweetener, applesauce, pumpkin pie spice, cinnamon, and milk and whisk to combine. Fold in oats, walnuts, and cranberries. Transfer to a 9x12 baking dish and sprinkle with sugar. Bake 35 minutes.
Makes 6 servings. (I've been making double batches and freezing individual portions for later)
