Tomato Rice Soup

Tomato Rice Soup

1 medium onion, diced
6 1/2 cups water
1 1/2 cups cooked white beans (or one drained 15 oz can)
3/4 cup dry brown rice (3 cups cooked and subtract 3 cups water, if adding when serving)
2 (14.5 oz) cans no salt added diced tomatoes, undrained
2 ribs celery, sliced
5 white mushrooms, sliced
1 TBSP dried italian seasoning
2 TBSP dried basil
1 1/2 tsp garlic powder
3 cups chopped swiss chard (or spinach)
1 TBSP miso

Saute onion in 1 TBSP water until tender. Add the water, beans, rice, tomatoes, celery, mushrooms, Italian seasoning, basil, and garlic powder. Bring to a boil then reduce heat. Cover and simmer for 30 minutes. Stir in chard and cook cover 10 more minutes. Dissolve miso in a couple TBSP of the soup and mix in.

Makes 8 servings.
