Chocolate and Butterscoch Mini-treats

Chocolate and Butterscoch Mini-treats


I think these are also called Scotcheroos with added mini-chips.

Peanut Butter, Chocolate and Butterscotch Krispie treats. Warning: addictive.



Yield: 16 pieces

Ingredients:



1/2 cup honey (Organic if you can get it)

1/2 cup crunchy or smooth peanut butter (organic better)

3 cups brown rice crisped cereal, regular crisped cereal will also work - I used regular Rice Krispies

3/4 cup milk chocolate chips

3/4 cup butterscotch chips

1 Tablespoon molasses (optional)

1 cup raisins (optional)

1/4 cup milk chocolate chips (optional to sprinkle on top)

1/4 cup butterscotch chocolate chips (optional to sprinkle on top)



Directions:



In a large pan, at low heat, combine honey and peanut butter. Optionally, add molasses and raisins for a slightly different taste. Heat for about 1-3 minutes stirring continuously to combine. Remove from heat and add cereal (if you use the larger deeper pan it is easier to mix in the cereal without it falling out of the pan) If you have a non-stick that is big enough use that. Press into a square baking pan.



Melt chocolate and butterscotch in a medium bowl over a saucepan of boiling water. Stir until smooth and spread melted chocolate over the rice crispy mixture in the lined pan.



If you really like chocolate, then sprinkle additional chips on top



Let cool to set chocolate in the refrigerator for 20-30 minutes, or overnight works too. What it looked like before I refrigerated: http://ift.tt/1rHbqmM...



Use a knife to separate around the edge of the pan and lift out of pan, carefully cut into small bars. I cut in 16 bars with a long serrated knife, then cut 8 of those in half again because it is pretty filling and decadent. Store in covered container up to for one week, but I guarantee you will eat them in way less than a week, they are addictive.
