I'm a fan of soups, salads, and/or sandwiches for lunch....so I end up making soup most weeks. And this is the absolute best on-plan one I've tried yet. I made some this week and I've actually really been looking forward to this for lunch each day with a little side salad.
Minestrone
1 onion, diced
2 carrots, diced
2 stalks celery, diced
1 zucchini, diced
2 cloves garlic, minced
1 1/2 cups cooked kidney beans (or drained 15oz can)
15oz no salt added diced tomatoes
15oz no salt added tomato sauce
7 cups broth
1 TBSP italian seasoning
1/2 tsp pepper
1 1/2 cups spinach, chopped
1/2 cup small pasta
1 TBSP miso
In a soup pot, saute onion, carrots, celery, and zucchini in a couple TBSP water. Add beans, tomatoes, tomato sauce broth, italian seasoning, and pepper and bring to a boil. Turn down heat and simmer 15 minutes. Add spinach and pasta and cook until pasta is tender. Mix miso with a little of the liquid and return to pot.
Makes 6 servings.
