1 lb baby bella mushrooms, sliced thin
1 onion, diced
1 carrot, diced
1/2 red bell pepper, diced
3 garlic cloves, minced
3 TBSP whole grain flour
4 cups broth
1 1/2 cups plant milk
1/2 tsp thyme
1/2 tsp garlic powder
pepper, to taste
dash low sodium soy sauce
2 baked potatoes, diced (optional)
In a large saucepot, saute mushrooms, onion, carrot, and bell pepper until tender. Add garlic and cook another minute. Sprinkle with flour and stir. Add broth and mix well. Simmer 15 minutes. Add remaining ingredients and simmer 5 more minutes. Optionally, serve over diced baked potato for a heartier soup.
Makes 4 servings. 88 calories, 2g fat, 126mg sodium, 14g carbs, 6g protein.
