Tempeh And Black Bean Tacos

Tempeh And Black Bean Tacos

1/2 medium onion, diced
2 jalapeno peppers, minced
2 garlic cloves, minced
2 tsp cumin
1 tsp coriander
1 tsp crushed red pepper
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
8oz package tempeh, diced
1.5 cups cooked black beans (or rinsed 15oz can)
15oz can no salt added diced tomatoes
1/2 tsp pepper

16 tortillas
2 cup salsa
2 avocado, sliced
1 bunch cilantro, chopped
8 cups shredded lettuce
4 tomatoes, diced
4 limes, wedged

In a large skillet, saute onion in a couple TBSP of water until tender. Add jalepeno, garlic, cumin, coriander, and crushed pepper and cook for 2 more minutes. Add tempeh and black beans and cook for 2 more minutes. Add tomatoes and heat 5 more minutes. Serve about 1/4 cup filling in each tortilla, top with 2 TBSP salsa, 2 avocado slices, sprinkle cilantro, 1/2 cup shredded lettuce, 2 TBSP diced tomatoes, and a lime on the side.

Makes 8 servings of two tacos.
