Italian almond cake *RECIPE*

1 1/4 cups flour
1/2 cup ground almonds
1/2 tsp baking powder
1/2 tsp salt
3/4 cup melted butter
1 1/4 cups sugar
2 eggs
1 tsp grated lemon zest
1 tsp vanilla extract
1 tsp almond extract
3/4 cup sliced almonds
1 tbsp sugar

Heat the oven to 160°C.
Line the base of a loose-bottomed cake tin and grease the base and sides.
In a bowl, sift in the flour, then add the ground almonds, baking powder and salt; stir to combine and set aside.
Add the melted butter and sugar to another bowl and whisk to combine.
Add 2 eggs and whisk to combine.
Add the lemon zest and vanilla and almond extracts.
Then, with a rubber spatula, stir in the flour mixture until well combined.
Pour the batter into the prepared tin and top with the sliced almonds and sprinkle with sugar.
Bake for about 30-35 minutes. The cake is done when a toothpick inserted into the middle comes out clean.
