125g / 1 cup softened butter
125g / 1 cup golden caster sugar
125g / 1 cup sifted plain flour
2 tsp baking powder
2 large eggs
1/3 cup ground pistachios*, plus a handful roughly chopped to garnish
For the icing:
1 cup softened butter
2 cups icing sugar
1/2 tsp vanilla extract
Preheat the oven to 180°C.
Using an electric whisk or wooden spoon, beat the butter, sugar and ground nuts together until very light and fluffy.
Beat in the eggs one at a time.
Carefully fold in the flour and baking powder.
Divide the mixture between 12 cupcake cases and bake for 10-20 minutes, or until a toothpick inserted comes out clean.
Cool the cakes on a wire rack.
Mix together the icing ingredients until smooth and fill a piping bag to decorate or use a palette knife. Top with chopped pistachios to decorate.
*to grind the shelled pistachios, place in a high-powered blender with about half the caster sugar. .

1 1/4 cups flour
1/2 cup ground almonds
1/2 tsp baking powder
1/2 tsp salt
3/4 cup melted butter
1 1/4 cups sugar
2 eggs
1 tsp grated lemon zest
1 tsp vanilla extract
1 tsp almond extract
3/4 cup sliced almonds
1 tbsp sugar
Heat the oven to 160°C.
Line the base of a loose-bottomed cake tin and grease the base and sides.
In a bowl, sift in the flour, then add the ground almonds, baking powder and salt; stir to combine and set aside.
Add the melted butter and sugar to another bowl and whisk to combine.
Add 2 eggs and whisk to combine.
Add the lemon zest and vanilla and almond extracts.
Then, with a rubber spatula, stir in the flour mixture until well combined.
Pour the batter into the prepared tin and top with the sliced almonds and sprinkle with sugar.
Bake for about 30-35 minutes. The cake is done when a toothpick inserted into the middle comes out clean.
