I've already made this one twice in a row because it's so good. It's a quick one and uses things I always have on hand.
1 onion, diced
2 cloves garlic, minced
2 15oz cans no salt added diced tomatoes
1 cup broth
1/2 cup cashews
2 pitted dates
1 tsp basil
1 tsp parsley
1 tsp oregano
3 TBSP nutritional yeast
pepper, to taste
1 tsp miso
Sauté onion in a coupe TBSP water until tender. Add garlic and cook another minute. Transfer to a blender, add remaining ingredients, and process until smooth. Return to pot and heat through. Dissolve miso in a couple TBSP of soup and return to pot.
Makes 4 servings. 203 calories, 8g fat, 92mg sodium, 30g carbs, 8g protein
