FarmerLynn has added a photo to the pool:
4 roma tomatoes, quartered
1/2 onion
2 cloves garlic
6oz whole grain spaghetti, broken into inch long pieces
4 cups broth
1 tsp cumin
1 tsp paprika
fresh cilantro
1 tsp miso
lime juice
Add tomatoes, onions, and garlic to a blender and process until smooth. In a large pot, toast noodles until browned, stirring constantly. Add tomato mixture, broth, cumin, paprika, and cilantro. Bring to a boil and simmer about 10 minutes until pasta is tender. Dissolve miso in a couple TBSP of the soup and return to pot. Serve with lime juice and cilantro.
Makes 4 servings. 179 calories, 1g fat, 66mg sodium, 37g carbs, 7g protein
