Sees candy shoppe came out with chocolate chips. I had to try them! So I finally made some cookies! I have to admit...they are soooo good! The chips are bigger than say nestles chips so they make the cookies explode with chocolate, what's not to love?

I've already made this one twice in a row because it's so good. It's a quick one and uses things I always have on hand.
1 onion, diced
2 cloves garlic, minced
2 15oz cans no salt added diced tomatoes
1 cup broth
1/2 cup cashews
2 pitted dates
1 tsp basil
1 tsp parsley
1 tsp oregano
3 TBSP nutritional yeast
pepper, to taste
1 tsp miso
Sauté onion in a coupe TBSP water until tender. Add garlic and cook another minute. Transfer to a blender, add remaining ingredients, and process until smooth. Return to pot and heat through. Dissolve miso in a couple TBSP of soup and return to pot.
Makes 4 servings. 203 calories, 8g fat, 92mg sodium, 30g carbs, 8g protein

4 roma tomatoes, quartered
1/2 onion
2 cloves garlic
6oz whole grain spaghetti, broken into inch long pieces
4 cups broth
1 tsp cumin
1 tsp paprika
fresh cilantro
1 tsp miso
lime juice
Add tomatoes, onions, and garlic to a blender and process until smooth. In a large pot, toast noodles until browned, stirring constantly. Add tomato mixture, broth, cumin, paprika, and cilantro. Bring to a boil and simmer about 10 minutes until pasta is tender. Dissolve miso in a couple TBSP of the soup and return to pot. Serve with lime juice and cilantro.
Makes 4 servings. 179 calories, 1g fat, 66mg sodium, 37g carbs, 7g protein

Tempeh Bacon and Asparagus in a Lemon-Garlic Sauce
MARINADE
1 TBSP miso
1/4 cup hot water
2 TBSP sweetener
2 tsp paprika
1 tsp liquid smoke
1 tsp garlic powder
1/4 tsp pepper
pinch cayenne
8oz tempeh, thinly sliced
6 cloves garlic
1lb asparagus
2 TBSP lemon juice
1 TBSP water
1 cup quinoa
2 cups water
REQUIRES PREPARATION. Combine marinade ingredients and mix well. Pour over tempeh and let marinade at least an hour, preferably overnight. Preheat oven to 425. Wrap garlic in foil and roast 40 minutes. Lay asparagus out on a baking sheet and bake along with it for the last 15 minutes. Squeeze softened garlic into a small bowl and mix with lemon juice and water.
Meanwhile, In a small sauce pan, bring quinoa and water to a boil. Cover and simmer about 15 minutes until quinoa is tender. While this cooks, saute tempeh with marinade in a large pan until browned on both sides. When all are ready, serve quinoa topped with 1/4 of tempeh bacon and 1/4 of asparagus. Pour 1/4 of garlic mixture on top.
Makes 4 servings. 323 calories, 8g fat, 169mg sodium, 60g carbs, 20g protein
