3 large tomatoes
1 tsp miso
1/2 cup cooked quinoa (or favorite whole grain)
1/2 cup cooked black beans (or favorite bean/lentil)
1 onion, diced
1 TBSP italian seasoning
Green onions or parsley (optional)
Preheat oven to 375. Cut the top off of the tomatoes and discard along with any remaining core. Scoop out soft insides of tomatoes into a mixing bowl, being careful not to tear skin. Add miso to bowl and stir until dissolved in the tomato juices. Add grain, beans, onion, and seasoning and stir until combined. Use the mixture to stuff the tomato shells. Place stuffed tomatoes on a silicone (or parchment paper) lined baking sheet. Cook about 15 minutes until tomatoes are soft. Sprinkle with optional garnish.
Makes 1 serving. 349 calories, 4g fat, 240mg sodium, 65g carbs, 16g protein.
