Sweet like a cinnamon roll this works as a breakfast or dessert and holds up well for leftovers.
SAUCE
2 flax eggs (2 TBSP ground flax and 6 TBSP water)
1 1/2 cups plant milk
4 pitted dates
1 TBSP arrowroot powder (or cornstarch)
2 tsp pumpkin pie spice
1/4 tsp vanilla extract
5 cups cubed whole grain bread
Sprinkle raisins or other dried fruit (optional)
FROSTING
1/2 cups plant milk
1/2 cup cashews
4 pitted dates
1/4 tsp vanilla extract
Add SAUCE ingredients to a blender and process until smooth. Place bread in a 9x9 baking dish and cover with SAUCE. Bake for 30 minutes. Rinse blender and add FROSTING ingredients. Process until smooth and pour over casserole.
Makes 6 servings. 337 calories, 8g fat, 336mg sodium, 62g carbs, 7g protein
