Baked Ziti
1 onion, diced
3 cloves garlic, minced
2 15oz cans no salt added diced tomatoes
1 tsp thyme
1 tsp oregano
16oz whole grain pasta
1 cup cashews
3/4 cup water
1 TBSP lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
Preheat oven to 350 degrees. In a sauce pot, saute onion in a couple TBSP water until tender. Add garlic and cook another minute. Add tomatoes, thyme, and oregano and simmer. Meanwhile, cook pasta according to direction. Drain and combine with tomato mixture. Spread in a casserole dish. In a blender, add cashews, water, lemon juice, garlic powder, and onion powder and blend until smooth. Pour over casserole and bake covered for 20 minutes. Uncover and cook another 10 minutes.
Makes 6 servings.
