RICE
1.5 cup cooked brown rice
2 TBSP lime juice
2 TBSP chopped cilantro
SALSA
1 roma tomato
1/2 cup sweet corn
2 TBSP chopped onion
1 clove garlic, minced
1 TBSP chopped cilantro
GUACAMOLE
1 avocado
2 TBSP chopped onion
1 TBSO chopped cilantro
1 tsp lime juice
VEGGIES
1 bell pepper, sliced
1/2 onion, sliced
sprinkle red chili flakes
1/4 tsp paprika
1/8 tsp cumin
1/8 tsp garlic powder
1/8 tsp oregano
4 10in flour tortillas (or flour/corn)
1 cup cooked black beans
1 cup shredded lettuce
In separate bowls, combine ingredients for RICE, SALSA, GUACAMOLE, and VEGGIES. Saute veggies until tender and return to bowl. Warm tortillas and add a couple TBSP each of RICE, SALSA, GUACAMOLE, VEGGIES, BLACK BEANS, and lettuce. Roll tortilla to serve.
Makes 4 servings.
