DRY INGREDIENTS
2 cups rolled oats
1 tsp baking powder
1 tsp baking soda
2 TBSP ground flax
1 tsp cinnamon
1/2 tsp nutmeg
WET INGREDIENTS
1/2 cup applesauce
1/4 cup raisins
1/2 cup orange juice (or juice from 1 orange)
2 TBSP lemon juice
1 cup plant milk
ADDINS
2 1/2 TBSP orange zest (optional)
3/4 cup blueberries (fresh or frozen)
3/4 cup chopped walnuts
Preheat oven to 375. Blend DRY INGREDIENTS and transfer to mixing bowl. Blend WET INGREDIENTS until raisins are not visible and add to mixing bowl. Stir together until combined. Fold in ADDINS. Scoop batter into silicone muffin pan (or use silicone liners) and bake 25 minutes.
Makes 12 muffins.
