Easy Holiday Lasagna
SAUCE
2 cups plant milk
1/2 cup cashews
1 tsp lemon juice
1 tsp apple cider vinegar
3 TBSP arrowroot powder (or corn starch)
3 TBSP nutritional yeast
1 TBSP miso
1TBSP garlic powder
1 TBSP onion powder
8oz frozen spinach
24oz tomato sauce
16oz lasagna noodles
Preheat oven to 350. Blend all SAUCE ingredients until smooth. Transfer to a saucepan and cook 5 minutes to thicken. Remove from heat and add spinach. In a large casserole dish, layer tomato sauce, noodles, and SAUCE ending with a tomato sauce layer. Bake for 40 minutes.
Makes 8 servings.
