I love to bake, just like Betty Crocker and all of those other folks who bake on The Food Network channel. I like to cook too. The kitchen is my happy place. I typically bake more in the fall and winter but I had a GINORMOUS amount of zucchini come in from the garden....and they keep coming in by epic proportions and I do not know what to do with it all....
I had to turn to Pinterest for ideas on how to use up zucchini. Last night with dinner I made a side dish of Zucchini Gratin...I had a nibble but unfortunately I cannot eat dairy so any dishes made with ooey and gooey delish cheese are off my menu (for me anyways, I do not make the family suffer along with me).
So last night after supper I made three loaves of this zucchini lemon poppy seed bread. Honestly, this barely took up any of my shredded zucchini overstock which still sits in my fridge. Ugh! I had good intentions today of baking up a pan of brownies using zucchini but I am still full of this zucchini lemon poppy seed loaf and I have yet to convince my picky children that the brownies will be good, I promise (actually, I don't know, but I can hope, right?) The kids refuse to try this loaf. More for me and Gary, I guess! Too bad Gary won't eat the brownies, so I would be left to eat it all myself. I can freeze the extras or bring some in to work for my co-workers.
This loaf, by the way, is absolute heaven if you love a good lemon loaf. You CANNOT taste the zucchini in it at all. Yes, you can see it is in there but if you can't get past the fact that it's in there then I suggest you eat it with your eyes closed. It's good, I promise! :)
