3 cups cooked brown basmati rice
1 red pepper, diced
6 spring onions, sliced
1 cup roasted cashews
1/2 cup currants
Large handful flat-leaf parsley, chopped
2 tbsp lemon juice
2 tbsp soy sauce
4 tbsp extra-virgin olive oil
Put the rice, red pepper, spring onions, cashews, currants and parsley into a large bowl.
Whisk together the lemon juice, soy sauce and olive oil, pour over the salad and toss everything together.
