Fountain of Youth High Fiber Salad

Fountain of Youth High Fiber Salad

2 cups frozen peas, thawed.

1 cup spring mix or Morrisson's Mediterranean salad.
**If plain spring mix then add 1 sliced shallot, half red and half yellow bell/sweet pepper

Dress with 2 tablespoons regular soy sauce, 1 tablespoon rice vinegar, 1 teaspoon toasted sesame oil for flavour (IMPORTANT: omit if you're oil-free or have heart disease)
Could also use whole seed sesame seeds instead of oil (PREFERRED), 1 tablespoon.

Hand toss then eat immediately as the vinegar will 'cook' the salad and it will wilt more quickly than it would if it was dry.
