Turkey meatballs with marinara sauce *RECIPE*

For the meatballs - put 400g minced turkey thigh, 4 tbsp finely chopped parsley, 3 tbsp finely chopped onion, 6 tbsp finely grated Parmesan and 1 crushed garlic clove into a large bowl. Add 1 tsp paprika, 1/4 tsp salt and 1/2 tsp pepper. Mix everything together gently using hands and form into about 18 balls. Place on an oiled baking sheet and bake at 200°C for 20 minutes.

For the marinara sauce - heat 2 tbsp olive oil in a large pan and add 4 crushed garlic cloves. Cook gently for 1 minute, then add 2 cans of crushed tomatoes, 1/8 tsp chilli flakes, 1 1/2 tsp sea salt, 1/4 tsp dried oregano, 1/4 tsp black pepper and a large sprig of fresh basil. Bring to a simmer, then reduce the heat and simmer for 20 minutes, or until the sauce is thickened. Discard the basil and add more seasoning if needed.
