POTATO WEDGES Servings: 3-4 INGREDIENTS 3 large russet potatoes ⅓ cup olive oil 1 teaspoon salt ½ teaspoon pepper 1 tablespoon garlic powder 1 tablespoon dried oregano 1 tablespoon paprika ½ cup vegetarian parmesan cheese PREPARATION Preheat oven to 400°F/200°C. Thoroughly wash potatoes, cut in half, and slice into wedges. Toss wedges in olive oil and seasonings. Place on a baking sheet, skin side down, and bake 40-50 minutes. Enjoy! ZUCCHINI WEDGES Servings: 3-4 INGREDIENTS 3 large zucchinis 2 eggs, beaten 2 cups Italian breadcrumbs 1 teaspoon red pepper flakes 1 teaspoon salt ½ teaspoon pepper PREPARATION Preheat oven to 350°F/180°C. Slice the ends off of each zucchini, then slice them in half and into wedges. In a bowl, mix breadcrumbs, red pepper flakes, and salt. Dip each wedge into egg mixture, then breadcrumb mixture. Place on a baking sheet, skin side down. Bake 15-20 minutes. Enjoy! AVOCADO WEDGES Servings: 3-4 INGREDIENTS 3 ripe avocados 2 eggs, lightly beaten 1 cup flour 2 cups panko breadcrumbs Salt, to taste Cayenne pepper, to taste PREPARATION Preheat oven to 400°F/200°C. Slice each avocado in half, then into wedges. Scoop out of the peel. Mix panko breadcrumbs with salt and cayenne. Dip each avocado wedge in flour, then eggs, then panko. Inspired by Filipino flavors, this burger is complete with bun, slaw and cheese — all in a pretty purple hue. Save this recipe: https://taste.md/2mrqrkz INGREDIENTS: For the buns: 2 cups flour 1 cups grated ube (purple yam or sweet potato), steamed and mashed ¾ cups warm water ½ tsp yeast For the cheese: 4 ounces solid mild cheddar cheese, shredded 2 tbsp nonfat milk powder 1 tablespoon tapioca flour or starch salt to taste 1 tablespoons butter 2 tbsp dry white wine 2 tbsp water 4-5 drops purple food color For the patties: ½ lb fresh ground pork 3 garlic cloves, minced 3 tbsp lower-sodium soy sauce 2 tbsp White vinegar Ground black pepper to taste For the slaw: 1 cup red cabbage, shredded ½ cup red onion, thinly sliced 1 tbsp ginger, minced 2 Thai chilis, seeded and thinly sliced ¼ cup white vinegar 1 tbsp sugar STEPS: 1.) Make the buns: In a bowl, combine warm water and yeast. Add to flour while mixing. Then add ube and knead into smooth dough ball. Cover with a clean cloth and allow to rise for 2 hours or until doubled in size. Transfer to a lightly floured surface, and gently knead to form a log. Divide into 6 equal portions. Gently roll each portion into a ball, place on individual parchment squares, cover the surface loosely with a clean towel, and allow to rest for 30 minutes. Cook in a steamer for a 15-18 minutes. Set aside. 3.) Make the cheese: In food processor, combine cheese, milk powder, tapioca flour, and salt. In a saucepan, combine butter, wine, and water. Cover and bring it to a boil. Pour the hot liquid over the cheese, a little at a time. Then process for about a minute, and then add food coloring. Continue processing until the cheese has melted and everything is combined well. Pour mixture into a small plastic-lined container, smooth the top, and cover. Refrigerate until fully set and firm enough to slice. 3.) Make the slaw: combine all ingredients in a bowl. Set aside for 15 minutes. 4.) Make the patties: combine all ingredients in a bowl. 5.) To assemble: Slice buns and toast. Set a cast iron skillet on medium-high heat. Divide patty mixture. Place equal portions on the skillet, and use a spatula to smash the patties into flat rounds. Cook until the outer edges are brown. Flip and place a slice of cheese on top of each patty. Once the other side is cooked and the cheese has melted, top on the bun, along with the slaw. Homemade Chicken Tikka Masala Servings: 5-6 INGREDIENTS Chicken Marinade 3 boneless, skinless chicken breasts 1 lemon 125 grams yogurt 6 garlic cloves, minced 1 tablespoon ginger, minced 2 teaspoons salt 2 teaspoons cumin 2 teaspoons garam masala 2 teaspoons paprika Bamboo or wooden skewers Sauce 3 tablespoons oil 1 large onion, chopped finely 2 tablespoons ginger, minced 8 cloves garlic, minced 2 teaspoons cumin 2 teaspoons turmeric 2 teaspoons ground coriander 2 teaspoons paprika 2 teaspoons chili powder 2 teaspoons garam masala 1 tablespoons tomato puree 800 grams tomato sauce or crushed tomatoes 300 milliliters water 250 milliliters cream Chopped coriander, to garnish Rice and naan bread, to serve PREPARATION Preheat oven to 500°F/260°C. Slice the chicken into bite-sized chunks, the combine the chicken with the rest of the chicken marinade ingredients in a bowl. Mix until evenly coated, then refrigerate for at least 1 hour. Skewer the marinated chicken pieces on bamboo skewers, then place them over a baking tray lined with parchment paper, making sure there is space underneath the chicken to help distribute the heat more evenly. Bake for about 15 minutes until slightly dark brown on the edges. Heat oil in a large pot over medium heat, then sauté the onions, ginger, and garlic until tender but not browned. Fry the spices for about 30 seconds to release their aromatics and flavor, stirring constantly, then stir in the tomato puree. Add the tomato sauce and water, then bring to a boil and cook for about 5 minutes. Pour in the cream and mix in the chicken, cooking for another 1-2 minutes. Serve with rice and naan bread! Here is what you'll need! THAI-STYLE CHICKEN AND PRAWN FRIED NOODLES (PAD THAI) Serves: 4 INGREDIENTS 3 tablespoons Thai fish sauce 3 tablespoons tamarind paste 3 tablespoons light brown sugar ½ lime, juiced 4 tablespoons vegetable oil 2 eggs, beaten 2 chicken breasts, finely sliced 200 grams raw prawns, shelled and patted dry 2 spring onions, finely sliced 1 chilli, finely sliced 30 grams coriander, finely chopped 2 grams garlic, crushed 600 grams flat rice noodles, cooked 100 grams bean sprouts Handful roasted peanuts, roughly chopped Lime wedges, to serve PREPARATION Combine the tamarind, fish sauce, sugar, and lime juice with 1 tbsp water and set aside. Cook the eggs in 1 tablespoon of oil and set aside. Add 1 tablespoon of oil to the frying pan. Sear the chicken until golden and cooked through. Add the prawns to the pan, and cook for about 2 minutes or until they just turn red. Tip in half of the spring onions, half the coriander, garlic, and chilli. Cook for 1 minute until fragrant, then set aside Heat 2 tablespoon of oil in the wok, then add the noodles and bean sprouts. Stir-fry for 2 minutes until the noodles have separated and everything is heated through. Add the chicken, prawns, and tamarind sauce. Toss with the noodles until well-coated. To serve, scatter over the roasted peanuts, remaining spring onions, coriander leaves, and lime wedges. Place the chicken breasts in the bottom of the slow cooker. 2. Cover the chicken with ketchup, apple cider vinegar, brown sugar, salt, pepper, paprika, cayenne, garlic powder, and Worcestershire sauce. Mix well, cover, and cook on high for 3 hours or on low for 6 hours. 3. In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Add both kinds of cabbage and carrots to the bowl and gently toss with the dressing. 4. Shred the chicken breasts with a fork in the slow cooker. 5. Serve on a burger bun with slaw. 6. Enjoy! Turkey meatballs with marinara sauce *RECIPE*

For the meatballs - put 400g minced turkey thigh, 4 tbsp finely chopped parsley, 3 tbsp finely chopped onion, 6 tbsp finely grated Parmesan and 1 crushed garlic clove into a large bowl. Add 1 tsp paprika, 1/4 tsp salt and 1/2 tsp pepper. Mix everything together gently using hands and form into about 18 balls. Place on an oiled baking sheet and bake at 200°C for 20 minutes.
For the marinara sauce - heat 2 tbsp olive oil in a large pan and add 4 crushed garlic cloves. Cook gently for 1 minute, then add 2 cans of crushed tomatoes, 1/8 tsp chilli flakes, 1 1/2 tsp sea salt, 1/4 tsp dried oregano, 1/4 tsp black pepper and a large sprig of fresh basil. Bring to a simmer, then reduce the heat and simmer for 20 minutes, or until the sauce is thickened. Discard the basil and add more seasoning if needed.

750g stale panettone
75g unsalted butter, softened, plus extra for greasing
4-5 tbsp brandy or dark rum
4 large eggs
25g caster sugar
450ml full-fat milk
300ml double cream
1 tsp vanilla extract
Slice the panettone into wedges and lightly butter one side of each. Place in a two-litre greased ovenproof dish, butter side up, in a single overlapping layer. Drizzle with brandy or rum. Mix the eggs and sugar in a bowl, whisk in the milk, cream and vanilla, pour over the panettone and leave to stand for 30 minutes. Meanwhile heat the oven to 170C/gas mark 3. Place the dish in a roasting tin.Pour enough just-boiled water into the tin to come halfway up the sides of the dish. Bake for 35-40 minutes, then rest for 10.
That's the recipe from the website. I sprinkle cinnamon sugar on top which makes it truly wonderful. Next time round, I need to add a little cinnamon powder too.

Prepare the lemon curd by whisking the egg yolks, eggs, sugar, lemon juice and lemon zest over a bain marie (a large bowl placed over a pan of simmering hot water). 3. Once combined, mix in the butter and whisk the mixture for about 10 minutes, until thick. 4. Pour into a pre-baked tart shell. 5. Bake for 6 minutes. 6. Whilst the tart is baking, prepare the raspberry chantilly by whipping the raspberries, sugar, vanilla extract and cream together. 7. Leave the tart to cool before dusting with icing sugar. 8.
