Small biscuits
7 dl (3 cups) all purpose flour
1 teaspoon baking powder
1 dl (⅓ cup) sugar
2 teaspoons freshly ground cardamom – if you so wish
150 g (1 ½ stick) softened butter
1 large egg
1 ¼ dl ( ½ cup + 1 tblsp) milk
Mix all dry ingredients. Pinch in the butter. In a separate bowl, whisk the egg, add the milk and whisk again. Add the wet mixture to the dry ingredients and work them together into a dough. Pinch off small pieces of dough and roll them into small balls, about
2 cm (¾ “) in diameter. Slightly larger is OK – no need to measure. :-)
Bake on a greased (or covered with baking parchment) cookie sheet for about 7 – 10 minutes in a 200º C (375º F) oven, until a rather pale golden color. Split each little ball with a fork while still warm, and put them back on the cookie sheet. Return to the oven and bake/dry them for another 5 minutes or so, until lightly browned and dry.
This is our family's recipe - there are probably as many versions as there are families....
Great with coffee or tea.
