Chickpea Piccata

Chickpea Piccata

BREADING
1/2 cup breadcrumbs
2 tsp italian seasoning

PATTIES
1 1/2 cup cooked chickpeas (or drained 15oz can), liquid reserved
6 TBSP liquid from the chickpea (aquafaba)
1 cup oat flour (blend some rolled oats)
1 TBSP italian seasoning
1 TBSP nutritional yeast
1/2 tsp turmeric
1 tsp miso
pinch black pepper

ADDITIONS:
2 tbsp capers (optional)
8oz whole wheat pasta, cooked
4 cups steamer veggies, cooked

SAUCE
4 TBSP oat flour
1 cup broth
2 TBSP lemon juice
1 tsp onion powder
1 tsp garlic powder
1 tsp miso paste

Preheat oven to 350. Mix BREADING ingredients in a bowl and set aside. Add patty ingredients to food processor and process until well combined. Divide into 4 and form into patties. Press each side lightly into BREADING to coat and place on a silicone baking sheet. Bake 40 minutes, turning halfway. Meanwhile, prepare pasta and steam veggies according to package directions. In a sauce pan, mix together SAUCE ingredients and heat through. Serve patties topped with SAUCE and optional capers, with sides of pasta and veggies.

Makes 4 servings. 424 calories, 4g fat, 140mg sodium, 82g carbs, 17g protein.
