Pinchos are usually savoury tapas consisting of small piece of bead covered with fish, ham, cheese, or tortilla etc and adorned with olives, tomatoe or pieces of pepper etc. They are served spiked with a tooth pick and traditionally the used toothpicks are counted to calculate the price- However in the cases pictured here th pinchos are sweet and made of goats cheese with fruit, coulis and nuts etc!
