Chickpea Tuna Salad
SALAD
1 1/2 cups cooked chickpeas (or drained 15 oz can)
1/3 cup finely chopped red onion
1/2 cup finely chopped celery
1/2 tsp mustard powder
2 1/2 TBSP tahini
2 1/2 TBSP lemon juice
1 tsp dried dill
1 TBSP shredded nori or dulse flakes(optional)
6 slices whole grain bread, toasted
6 romaine leaves
In a medium sized mixing bowl, mash chicpkeas. Add remaining SALAD ingredients and mix well. Make into sandwiches with 2 slices toast, 1/3 of chickpea mixture, and 2 romaine leaves.
Makes 3 servings.
