Pasta e Fajioli

Pasta e Fajioli

6 cups broth
1.5 cups cooked kidney beans (or drained 15oz can)
1.5 cups cooked white beans (or drained 15oz can)
15oz can no salt added diced tomatoes
8oz tempeh, crumbled
1/2 cup chopped onion
1/2 cup chopped carrot
1/2 cup chopped celery
3 garlic cloves, minced
1 TBSP Italian seasoning
1 tsp pepper
1 cup ditalini (or other small pasta)

Add all ingredients except ditalini to a soup pot. Simmer 10 minutes. Add ditalini and simmer 10 more minutes until pasta is tender.

Makes 6 servings. 223 calories, 42g carbs, 29mg sodium, 15g protein, 3g fat
