Grano dolce

Sweet wheat

Based on an old-fashioned dessert found in southern Italy. (The preparation and ingredients vary from region to region.)

For this dish the farro was cooked until tender, drained , then mixed with a spiced white grape juice reduction. Usually spiced vincotto would be used, but I substituted that with a white grape juice reduction made with honey, cinnamon, and cloves.

Once the farro mixture had cooled it was combined with pomegranate arils, walnuts, white grapes, and chopped up chunks of a Pernigotti nocciolato snack bar.
After that it was chilled for hours before serving.

Beverage: Chilled S.Pellegrino sparkling mineral water carefully poured over ice with a layer of homemade pomegranate syrup at the bottom. Garnished with pomegranate arils and a sprig of rosemary.
