RECIPE Ingredients: 2 tablespoons soy sauce plus 2 teaspoons, divided ¼ cup Shaoxing wine plus 2 teaspoons, divided (Chinese rice wine) 1 ½ teaspoons five-spice powder 4-pound whole chicken 6 shiitake mushrooms, dried 4 garlic cloves, chopped 1 tablespoon fresh ginger, grated ⅔ cup ground pork 2 scallions, finely sliced 2 teaspoons rice wine vinegar 2 lotus leaves For the crust: 2 ½ pounds nontoxic kiln fired clay String Steps: 1. In a bowl, combine 2 tablespoons soy sauce, a quarter of a cup Shaoxing wine, and five-spice. Stir to combine. Add the chicken, and turn over to cover in the marinade, then cover and refrigerate overnight. 2. In hot water, soften lotus leaves for 40 minutes, and the mushrooms for 30 minutes. Drain the mushrooms and finely chop. Pat dry the lotus leaves with a paper towel. 3. Preheat your oven to 350 degrees. 4. Make the stuffing: In a bowl, mix the mushrooms, garlic, ginger, pork, scallions, remaining 2 teaspoons soy sauce, 2 teaspoons Shaoxing wine together, and rice wine vinegar. Set aside. 5. Drain the chicken from the marinade, and then stuff the chicken with the combined mixture. 6. Prepare the chicken: Roll out a piece of clay to about 1-centimeter thick and lay 1 of the soaked lotus leaves over the top. Place the chicken on top of the lotus leaf. Lay a second lotus leaf over the top of the chicken. 7. Wrap the chicken in the leaves, and then secure the leaves with string. 8. Cover the whole chicken and lotus leaves with the non-toxic clay. Place in the oven and bake for 3 hours and 30 minutes to 4 hours. 9. Remove from the oven and rest for 20 minutes. I made this cake in my Rice Cooker. I decided to make Stu a decent birthday cake. Most Tiramisu involves using Ladyfingers but I don't like the ingredients in them. I made this totally from scratch, no boxes or jars of mix or frosting were used when making this. I don't like all the sugar that's in those. The cake is chocolate and I made a Strong Cherry Coffee /Kahlua Syrup that I brushed all over the cake :) The icing is made of Mascarpone Cheese & Coconut Cream. No Icing sugar in this frosting at all. It tastes heavenly!

Follow Sarah on Instagram: @shymanson Follow Kismet on Instagram: @kismetlosangeles RECIPE Ingredients: For the filling: 4 tablespoons olive oil, divided 1 pound ground chicken, preferably dark meat Kosher salt 1 small onion, finely chopped 1 small leek, white and light green parts, finely chopped 1/4 bulb fennel, finely chopped 1 clove garlic, finely chopped 2 bay leaves 1 sprig marjoram 1/4 teaspoon dried mint 1/8 teaspoon ground clove 3 tablespoons lemon juice, plus 1 teaspoon lemon zest 2 tablespoons toasted pine nuts For the pies: 1/2 (16-ounce) package 9” x 14” phyllo pastry sheets 2 tablespoons olive oil 1 egg, lightly beaten 2 tablespoons sesame seeds Kosher salt For the tahini sauce: 1/3 cup tahini 2 tablespoons lemon juice 1/4 teaspoon salt 2 to 6 tablespoons water For plating: Tahini sauce Sumac Mixed herbs Edible flowers Steps: 1. Filling: Heat 2 tablespoons oil in a large skillet over medium-high. Add chicken and cook, stirring to break up clumps, until chicken is browned there is no more pink, about 5 minutes. Season with salt. Transfer chicken and remaining juices to a medium bowl and set aside. 2. Heat remaining 2 tablespoons oil in same skillet over medium-high. Add onion, leek, fennel, garlic, bay leaves, marjoram, mint and clove and cook, stirring occasionally, until the onion is softened, about 10 minutes. Add chicken and its juices, plus lemon juice, zest, salt and pine nuts. Stir to combine and cook down until moist, but not all of the liquid has evaporated. Transfer to a large bowl and let cool. 3. Pies: Preheat oven to 400 degrees. Place a sheet of phyllo on a cutting board. Brush lightly with olive oil and top with a second sheet of phyllo, pressing gently to adhere. Brush with more olive oil. Using a pizza cutter or sharp knife, cut oiled phyllo into three 3-inch-wide strips. Add about 2 tablespoons chicken mixture near 1 corner of a strip on end nearest you, then fold corner of phyllo over to enclose filling and form a triangle. Continue folding strip, maintaining triangle shape. Put triangle, seam side down, on a parchment-lined baking sheet, brush with egg wash and top with sesame seeds. Repeat with remaining phyllo and mixture to make 9 pies. 4. Bake pies until phyllo is golden brown and crisp, about 9 minutes. Let cool for 10 minutes. 5. Tahini: Combine tahini, lemon juice and salt. Whisk together and slowly add water, starting with 2 tablespoons. Continue adding water until you reach your desired consistency. 6. RECIPES: Pandan Honey Comb Cake Cubes Ingredients: 2 cups tapioca starch 5 tablespoons rice flour 1 1/2 teaspoons baking powder 1 teaspoon baking soda 6 large eggs 1 1/2 cups sugar 2 tablespoons vegetable oil 1 teaspoon salt 1 3/4 cups coconut milk 1 teaspoon pandan extract Green food coloring Steps: 1. Preheat oven to 350 degrees. Line the bottom of a cake pan and butter the sides. Place the pan onto a baking sheet. 2. In a large mixing bowl, sift the tapioca starch, rice flour, baking powder and baking soda. 3. In another large mixing bowl, whisk together the eggs and sugar. Add in the oil, salt and coconut milk and mix well. Add in the pandan extract and green food coloring and mix to a vivid green color. 4. Gradually mix the liquid into the dry ingredients, whisking constantly to avoid lumps. Mix until smooth then pour into the prepared pan, cover tightly with foil and bake for 1 hour 15 minutes, until it no longer wobbles and is firm to the touch. Allow to cool in the pan for 10 minutes, then remove and put onto a wire rack to cool completely. Cut into squares to serve.. I took Stu out for his birthday to The Taste Of Thai Express restaurant today and I ordered Chocolate Mousse Cake to go. We didn't see it until we got home, it was very small. However, it was very rich so we got to enjoy a little taste each. We could have eaten a bit more though.

RECIPE Ingredients: 1 cup butter, unsalted and at room temperature 1 cup light brown sugar ¾ cup granulated sugar 1 egg, plus 1 yolk 1 tsp vanilla extract 1 cups all-purpose flour 1 cups bread flour 3/4 tsp baking soda 3/4 tsp salt 2 cups milk chocolate, finely chopped (good quality, at least 35% cocoa solids) Pinch of sea salt flakes Steps: 1. Preheat oven to 350 degrees. 2. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and both sugars on medium speed until light and fluffy, about 3 to 4 minutes. Next, add the whole egg and egg yolk then beat until combined, followed by vanilla. With the mixer on low, gradually, add the dry ingredients, beating just until incorporated. 3. Divide the dough into 3 equal portions and shape each into a 4 × 6-inch rectangle. Wrap in saran wrap and refrigerate for at least an hour. 4. Remove from the fridge and unwrap the dough rectangles. On a lightly floured work surface, place 1 rectangle dough and sprinkle half of the chocolate evenly over the rectangle. Top with the second piece of dough and sprinkle the remaining chocolate over the second piece of dough, then finally top with the third dough. 5. Dust the top piece of dough lightly with flour, then gently roll the stack of dough until it is about 1 ½ inches thick. Use a 2-inch round cutter to cut as many rounds as possible from the dough. Transfer the rounds to a parchment-lined baking sheet, place 2 inches apart to allow spreading. You can gather all the scraps of dough together into a mound and cut additional cookies out. 6. Cover the baking sheet loosely with saran wrap and refrigerate the cookies for at least an hour. 7. Bake for 9 to 10 minutes until the edges of the cookies are set. The centers will seem really soft and under-baked, but they’ll set up as they cool. RECIPE Ingredients: 3 egg whites 1/4 cup granulated sugar 1/2 cup flour 1/3 cup milk 4 tablespoons olive oil 1 teaspoon bamboo charcoal powder 1 1/2 cups whipped cream Parts for face: Pieces of chocolate Marshmallows Almond slices Steps: 1. Preheat oven to 390 degrees. 2. In a mixing bowl, whisk the egg whites while adding sugar, a third at a time, until a meringue is formed. 3. In a separate bowl, combine the flour, milk, olive oil and 1/4 of the meringue. Gently fold in the rest of the meringue. 4. Place one-fourth of the dough into a separate bowl and add the bamboo charcoal powder. Mix to combine. 5. Line a baking tray with parchment paper and pipe the black dough onto it, making cow spot-shaped designs. Bake for about 2 minutes. 6. Reduce heat to 325 degrees. 7. Pour the white dough on top and spread out with a spatula. Bake for 12 minutes. Spread the whipped cream over the hot cake and roll it up. 8. RECIPE Ingredients: 1 ½ ounces anejo tequila ¾ cup hot water 1 ½ tablespoons cinnamon bark syrup 1 teaspoon honey 1 tablespoon lemon juice Cinnamon stick, for garnish For cinnamon bark syrup: 1 cup water 1 cup sugar 1 vanilla bean, scraped 3 cinnamon sticks For the rim of the glass: ½ cup sugar 2 tablespoons ground cinnamon Steps: 1. Make the cinnamon bark syrup: 2. Combine sugar, water and 3 cinnamon sticks in a saucepan and bring to a boil. After 3 minutes of boiling, add the vanilla bean and scrapings. Let boil for 1 to 2 minutes longer, then turn off the heat, remove the cinnamon sticks and vanilla bean, and set aside. 3. Prepare the cocktail: 4. Using a shallow bowl or small plate, combine sugar and ground cinnamon. Use a fork to gently mix them together. Next, wet the rim of a glass mug by dipping just the top of it (flipping it upside down) in a bowl of water. Transfer to cinnamon sugar mixture, twist and remove your perfectly cinnamon sugar rimmed mug. 5. Fill the mug with tequila, cinnamon bark syrup, lemon juice, honey and hot water. Stir and garnish with a cinnamon stick if desired. 6. RECIPE Ingredients: Ice Cream 400ml thickened/whipping cream ½ cup powdered sugar 1 tsp vanilla 1 cup chopped Oreos 40g plain flour 40g cocoa 150g castor sugar 150g butter 150g chocolate 3 eggs 1 cup chopped Oreos 20 whole Oreos Steps: Ice Cream 1. Add cream, sugar and vanilla to a large mixing bowl and whip on high speed until you reach stiff peaks. Add chopped Oreos and fold in. Place in a 8” x 8” cake pan and freeze overnight. Brownies 1. Preheat a fan forced oven to 175C (340F). Spray 30/20cm baking tray pan with non stick cooking spray and lay the bottom and sides with parchment paper. Set aside. 2. Add butter and chocolate to a microwave safe bowl. Microwave for 20 seconds at a time and repeat until it becomes smooth. 3. Add flour, eggs, sugar to a large mixing bowl and mix on low speed using the paddle attachment or a wooden spoon until everything is combined. 4. Slowly add chocolate and butter mixture while mixing on low speed. 5. Add chopped Oreos and fold in. 6. Add batter to baking tin lined with baking paper. Add whole Oreos on top. Bake for 30 min or until a pick comes out with moist crumbs. 7. Once the brownies have baked and cooled completely use a 3 inch round cookie butter to cut out 12 shapes from the brownies. I found placing a chopping board on top of your brownies and flipping them over on to the baking tray helps because you cut from the side without Oreos. 8. RECIPE Ingredients: 1 head of garlic 2 tablespoons extra virgin olive oil 1 pinch salt Fresh cracked black pepper 1 sprig fresh thyme, removed from stem Steps: 1. Preheat oven to 400°F. 2. Chop off the top stem of the garlic head to expose the individual cloves. Place garlic on a piece of foil, and drizzle with olive oil to coat the exposed cloves. Season with salt and pepper, and sprinkle with thyme. 3. Wrap the aluminum foil around the head of garlic to seal so the oil doesn't seep from the packet. Place on a cookie sheet and bake for 45 minutes. 4. RECIPE Ingredients: 10 wafer cones 2 2/3 cups whole hazelnuts 4 cups heavy cream 3 1/2 cups milk chocolate, chopped 2 1/2 cups dark chocolate, chopped For the coating 3 1/3 cups milk chocolate 1 1/3 cups hazelnuts, roasted and chopped Steps: 1. Preheat oven to 350 degrees. 2. Dip the wafer cones lightly in water and place onto a large baking sheet. Bake in the oven for 2 to 3 minutes, until the cones start to wilt. 3. Remove from the oven and carefully unwrap, then push into your pudding bowls/hemisphere molds, overlapping the cones to cover the sides and bottom of the bowls. 4. Place back into the oven for 5 minutes to re-crisp, then remove and allow to cool. 5. Make the filling: On a baking sheet, add the whole hazelnuts and place in oven. Bake for 8 to 10 minutes, until the nuts are fragrant. 6. In a bowl, add all but a handful of hazelnuts and pour the heavy cream on top. Allow the hazelnuts to steep in the cream for at least 30 minutes. 7. In a large bowl, add the milk and dark chocolate. Next, heat the cream until just boiling. Strain the cream through a fine sieve into the chocolate bowl and allow to sit for 3 minutes. You can throw away the hazelnuts from the sieve. 8. Whisk the chocolate and cream together, then divide the ganache between the 2 wafer shells. Leave to cool for at least 4 hours in the fridge. 9. When cool, with a melon baller, scoop out a small hole in the center of the chocolate in 1 of the halves. 10. Temper the chocolate for the coating and pour equally over each half, then cover with chopped hazelnuts. Using the back of a spoon, gently mix the chocolate and hazelnuts together then set both halves aside to cool. 11. When cool, fill the hole you made with the reserved hazelnuts and place the other half on top to sandwich the 2 halves together. You may use any remaining chocolate to fill in the join line if necessary. 12.
