1 cup brown basmati rice
1/2 cup currants
6 spring onions, sliced
1 red pepper, de-seeded and chopped
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
2 tbsp pine nuts
1/2 cup roasted cashews
1/2 cup chopped flat-leaf parsley
2 tbsp lemon juice
4 tbsp soy sauce
4 tbsp extra virgin olive oil
1 garlic clove, crushed
Cook the rice then drain and set aside to cool.
Meanwhile, heat a frying pan and quickly toast the seeds and pine nuts; set aside to cool.
Whisk together the lemon juice, soy sauce, olive oil and garlic.
Add the red pepper, parsley, spring onions and currants to a large serving bowl. Stir in the rice and then the toasted seed mix and cashews.
Drizzle the dressing over the salad and stir through.
