약과 / Yakgwa (baked version)

Traditionally this Korean dessert would be fried first, but this version is baked.

All purpose flour, baking powder, baking soda, salt, and sesame oil were evenly mixed together before being combined with a mixture of rice milk and honey. (Rice milk was used as a substitute for soju.) The dough was rolled out, cut out, pierced, brushed with vegetable oil, and baked.

Once removed from the oven the pastry pieces were immediately placed in a syrup made of grated ginger, water, brown rice syrup, and honey to soak.

Removed from the syrup and decorated with pine nuts before serving.

Beverage: Assi Brand’s ’Instant Date Tea (Honeyed)’.
