Roe topped “gunkan maki”? Nope. That’s coconut sweet rice wrapped with a light green soy wrapper and topped with faux roe. Passion fruit juice, sugar, and agar agar were cooked together, then poured into a squeeze bottle. To form the faux roe, droplets of the agar agar mixture were carefully squeezed into a chilled grape seed oil filled glass bowl that was set in an ice bath. The faux roe was then strained from the oil and chilled for later use.
