The roll in front that looks like a “tuna/tekka maki” is actually coconut sweet rice rolled with a light green soy wrapper around a slice of red bean jelly/yokan.
The roll in the middle that looks like a “omelette/tamago nigiri” is actually coconut sweet rice topped with a durian coconut milk flan wrapped with a light green soy wrapper.
The roe topped “gunkan maki” in the back? That’s coconut sweet rice wrapped with a light green soy wrapper and topped with faux roe. Passion fruit juice, sugar, and agar agar were cooked together, then poured into a squeeze bottle. To form the faux roe, droplets of the agar agar mixture were carefully squeezed into a chilled grape seed oil filled glass bowl that was set in an ice bath. The faux roe was then strained from the oil and chilled for later use.
Served with a side of three condiments:
Soy sauce = Brown sugar syrup.
Pickled ginger = Thinly sliced apples caramelized in a sticky mixture of ginger, cinnamon, and sugar.
Wasabi = Spiced matcha whipped frosting. (Spiced with ground cardamom, allspice, cinnamon, ginger, and black pepper.)
Beverage: Harney & Sons’ ’Japanese Sencha’ green tea. Unsweetened.
