You can also substitute the vanilla extract with Pimm's.
I topped the lemon cupcakes with a Pimm's Buttercream that I colored pink:
50g unsalted butter, softened (just under 1/4c or 3.6 tablespoons)
400g icing sugar (aka powdered sugar - 3 1/3 cups)
2 tbsp Pimm’s
1 tbsp milk
