"Make Your Own" Cookies

"Make Your Own" Cookies


A variation on the "Soy Awesome Cookies" http://ift.tt/1kzUBNQ , which are an absolute hit every time I make them, provided the base for the kids at camp to go wild with additions. Each of them got to choose what they wanted (and didn't want) to put in "their" cookie, so needless to say nobody complained!



MYO Cookies

makes ~60 cookies

1 ¼ cups sugar

1 ¼ cups brown sugar

1 cup coconut oil or butter, melted

⅔ cup shortening

1 (300g) package “dessert style” or silken tofu (I used Sunrise Soya’s Sunrise Custard Flavour Tofu Dessert http://ift.tt/1smZlWM... )

2 tbsp corn syrup

2 tbsp vanilla

3 cups flour

3 cups barley flour

½ tsp nutmeg

2 tsp baking soda

2 tsp salt

additional mix ins, as desired (we had cornmeal, oats, coconut, marshmallows, candy covered chocolate, chocolate chips, raisins, Craisins and baking gums)



Beat together the sugars, coconut oil and shortening.

Puree tofu, corn syrup and vanilla in blender or food processor until smooth.

Add pureed tofu to the sugar mixture and mix well.

Add the flours, nutmeg, baking soda and salt to the creamed mixture and mix to combine.

Divide into portions and add mix-ins (no more than 1 tsp of each per cookie). Mix well with your hands and form into balls.

Place onto parchment-lined cookie sheets. Cover and let rest while oven preheats.

Heat oven to 350F.

Bake, 1 sheet at a time, for 13-15 minutes.

Cool completely on sheets.
