I love these one pot meals where you just dump everything into the pot and cook a few minutes and dinner is ready!
This is a good meal to use up some of that fresh Zucchini from your garden..
If you saw my last post of how it looks before its cooked
this is how it looks after its finished cooking !
One lb of your favorite pasta
One pound fresh mushrooms thinly sliced.
3-4 cups Zucchini thinly sliced and quartered
1 cup peas (or less)
Two tsp minced garlic.
1/4 tsp thyme
Salt and pepper to your taste
1/2 cup grated parmesan
1/4 cup heavy cream or milk.
4-1/2 cups water or chicken broth
In large stock pot over medium - high heat combine pasta, mushrooms, Zucchini, peas, garlic and thyme
Season with salt and pepper to taste.
Add your water or broth.
Bring to a boil, reduce heat and simmer uncovered until liquid has reduced. About 8-12 minutes
Stir around slightly to avoid sticking as the liquid reduces.
Stir in parmesan cheese and cream.
Serve and enjoy!
Notes... These are the veggies I used feel free to change up the veggies to your favorites like carrots or yellow squash etc etc...
You can also use all water or all broth I used half of each in this meal!
