八宝饭 / Ba bao fan



a.k.a. Eight Treasure Rice

(Made this for the Chinese New Year as this dessert is traditionally served during the Chinese New Year celebration.)



Cooked and sweetened glutinous rice was carefully placed into a bowl with eight different toppings and filled with a little red bean paste before it was steamed again. After the dessert had cooled down it was easily removed from the bowl and onto another dish to be served. Leftover syrup from the lotus seeds was then poured over the rice dessert.



The eight topping are ginkgo seeds, lotus seeds, Job’s tears seeds, lily bulb petals, dried red dates, dried longan, dried plums, and halved walnuts.



The ginkgo seeds, lotus seeds, Job’s tears seeds, and dried lily bulb petals were each cooked separately in sugar and water until a thick syrup was formed.



(I didn’t have any pre-packaged dried red dates and dried longan on hand so I had to resort to making them myself. The red dates and longans were slowly baked at a very low temperature.)
