The Cheese Crisp is a staple of Tucson's local Sonoran-style cuisine. Southern Arizona restaurants started selling these huge, baked flour tortillas smothered with cheese more than 50 years ago. My version is topped with green chile strips, cilantro leaves, and a creamy ranch and roasted Hatch green chile salsa.
